Lemon Simple Syrup

Making a simple syrup is exactly that....simple! Equal parts liquid to sugar. But instead of just using water and sugar, I love to make a lemon simple syrup. Equal parts fresh lemon juice to sugar.


Gently simmer over medium heat, stirring continuously until all the sugar has dissolved. Then let it cool and store in an airtight container for up to three weeks in the refrigerator. You can use this to brighten and sweeten up a stone fruit galette, make lemonade, or a delicious lemon drop martini! There are so many ways to use it... you will be glad to have it on hand in your fridge!

Ingredients

  • 1 cup freshly squeezed lemon juice
  • 1 cup granulated sugar
Instructions

Using an electric citrus juicer, juice the fresh lemons until you have 1 cup of juice.
Place the juice in a small sauce pan and add in the 1 cup of granulated sugar. Turn the heat to medium and continuously stir until all the sugar in dissolved.
Turn the heat off and let the simple syrup cool completely before using or storing.
Tips
  • NOTE: Can be stored in an airtight container for 3 weeks in the refrigerator.

    Does it also work if you use a non-caloric sweetener like Swerve?

      Hi Nancy! I haven't tried this recipe with a non-caloric sweetener so I am not certain. Although I can't imagine that it wouldn't turn out ok. Sorry I don't have more direction on this.
