Watermelon is in full season during summer, and I love all the refreshing recipes, from popsicles, to fruit salads, to pizzas, juice, granita, drinks...and so many more... the list is endless. It is sweet and refreshing!


One of the favorite recipes at home is watermelon juice, sometimes we add mint, lime juice or combine with other fruits for a tropical explosion. This time we decide to make POPSICLES. I ordered some cute silicon popsicles molds online and decided to turn our favorite fruit into a delish and fancy popsicle.


First, we blended some watermelon and strain to remove the pulp and get a delicious juice. Then get the frozen wild blueberries and mint ready. Add a about a spoonful of frozen wild blueberries on each mold, add the watermelon juice carefully and some mint. then freeze for about 24 hours.


It i ready to enjoy as it is!


Now, want to make a fancy mocktail? In a tall glass, add a few ice cubes, then add blueberries, add the popsicle and our any flavor or your favorite sparkling water or juice. Garnish with fresh mint and viola!

Ingredients

  • 2 cups of watermelon pieces
  • 1/2 cup of frozen wild blueberries
  • 8 fresh mint leaves
  • 8 popsicles molds
Instructions

First blend the watermelon on high speed. Then strain the juice to remove any excess pulp and get a smoother consistency.
Then get the popsicles molds, add 1 spoonful of wild blueberries, then pour the juice carefully, and finally add the fresh mint leave or in pieces.
Freeze for 12-24 hours.
Tips
  • You may add the juice of a lime for a nice tangy twist on this watermelon popsicle.
