I think it is safe to say that the majority of people have probably gone through a ramen-obsessed phase at some point in life. Or maybe that was just me??? It was the “perfect” meal in college because it was super cheap, quick, easy, and delicious. I definitely ate it too often so I got sick of it pretty quickly! Sometimes I still get a random craving for it though, so that’s when I make this homemade ramen stir fry. It gives you the feel of the traditional 13¢ ramen, but better. It really is the ultimate comfort food. Enjoy!

Ingredients
For the chicken:
  • 1 chicken breast
  • 1 tsp olive oil
  • 2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt & pepper to taste
For the ramen:
  • 3/4 cup chicken broth
  • 2 Tbsp soy sauce
  • 1 tsp rice vinegar
  • 1 tsp brown sugar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Hot sauce to taste
  • 1 packet of ramen noodles (discard the seasoning packet)
  • 1/2 cup frozen stir fry veggies
Instructions
For the chicken:
Rub chicken breast with olive oil.
Season with garlic powder, paprika, salt & pepper.
Air fry at 390° for 8 minutes on each side.
Dice or shred into bite sized pieces.
For the ramen:
In a saucepan over medium heat, add chicken broth, soy sauce, rice vinegar, brown sugar, garlic powder, onion powder, and hot sauce.
While that’s simmering, boil the ramen noodles in a separate saucepan for 2-3 minutes.
Strain and add to the chicken broth mixture.
Steam the stir fry veggies according to directions.
Then add the veggies to the saucepan, along with cooked chicken.
Let all the flavors soak in for a few minutes then enjoy!😋
Tips
  • The chicken does not need to be air fried. I just prefer it this way. You could also grill, bake, or fry it.
  • Leftover rotisserie chicken works great and saves time instead of cooking your own chicken breast!
