How to make an easy fried zucchini fritter recipe. This is a delicious way to use extra zucchini from your garden. These are also called zucchini pancakes or zucchini patties.

This is a simple recipe made with flour, egg, and shredded zucchini. I also add some pepper sometimes, but this is optional.

Zucchini patties are pretty easy to make, but they can fall apart. The batter should be thick like a pancake batter. Add more flour if necessary. I also recommend using a fish spatula to flip them to reduce breakage. I have more tips on my fried zucchini fritters post for perfect fritters.

These are best served right away because they will be crispy. However, you can save leftovers in the fridge and reheat them in the oven. You can also freeze them for later, but they are best served right away.

Ingredients

  • 2 zucchini (grated)
  • 1 cup flour
  • 1 egg
  • 1 teaspoon salt
  • ½ cup olive for pan
  • 1 pepper
Instructions

Grate 2 medium sized zucchini. Add a teaspoon of salt and let sit for 10 minutes. Then squeeze out excess water.
Combine shredded zucchini, diced green pepper, flour, egg, and salt in a medium sized bowl. Mix well.
Add oil to a nonstick pan and heat over medium heat.
Form fritters so they are 1/2 inch chick. Cook fried zucchini fritters until brown and crispy and then flip. This should take about 45 seconds per side. Flip and cook the other side.
