You will not be able to get enough of this summer appetizer! So simple, so delicious. Start with goat cheese, some greek yogurt to make it extra creamy, honey to sweeten, and whirl it up in your food processor (even a hand mixer will do!). Then take some baby tomatoes - whatever beauties you can find at the market. I love to leave them on the stem as the presentation is just gorgeous this way. Drizzle with olive oil, S&P, and slow roast in the oven for a few hours. Then simply spread the cheese into a shallow bowl, top with the tomatoes, an extra drizzle of olive oil, and fresh herbs - I prefer basil. Serve this appetizer on it's own with a baguette before dinner, or if you're entertaining a crowd, use it as a stunning centerpiece to a cheese and charcuterie board to wow your guests. You can do this!

Ingredients

  • 1 package baby tomatoes on the vine
  • Olive oil
  • Fresh basil
  • S&P
  • 1 large log goat cheese (10-12 oz) at room temperature
  • 1/2 c plain greek yogurt
  • 1-2 T honey, per your preference for sweetness
  • 1/4 t salt and fresh cracked pepper
  • Crusty baguette or crackers for serving
Instructions
For the Tomatoes
Place tomatoes in a baking dish, drizzle with olive oil, and sprinkle with salt and pepper.
Bake at 275º for about 2-3 hours, depending on the size of your tomatoes and how "dried" you like them. I prefer them more cooked down, which gives a richer, more concentrated flavor.
Allow tomatoes to cool to room temp before placing on top of the cheese.
To assemble:
Combine goat cheese, yogurt, honey, S&P in a food processor and whip until smooth.
Spread the cheese into a shallow bowl and top with ribbons of fresh basil.
Lay the roasted tomatoes on top, using any leftover oil in that pan to drizzle over top.
Drizzle with extra olive oil and sprigs of basil if desired.
Serve with a crusty baguette.
