This Fool Proof Blueberry Compote is so delicious, you’re going to want to make it often and slather it on everything. Guaranteed!

You may be asking, what is a compote and how does it differ from Jellies, Jams and Marmalades? Excellent question! Those are all terms for fruit preserves with just a slight difference.

A compote is whole pieces of fruit cooked down in sugar syrup with spices. Jelly is the extracted juice of cooked fruit with thickener added, usually pectin. Jam is whole fruit cooked down until it looses it shape and it thickens as it cooks down. A marmalade is a fruit preserve that contains citrus rinds. The citrus rinds has natural pectin and that’s how it thickens.


Of all those delicious fruit preserves, compote is by far my fave and its also the easiest to prepare. This recipe works for any fruit too. Use any fruit you like, fresh or frozen… its all good!

To make this Fool Proof Blueberry Compote, you’ll need besides the obvious blueberries is a sweetener; my sweetener of choice is Agave. Some kind of spice; I love Cinnamon with blueberries. You’ll need acid too, my acid of choice is almost always lemon. Finally a pinch of salt and some vanilla extract. Cook all that down for about 30 minutes and done! Easy Freakin Peasy!

My Fave way to eat this fool proof blueberry compote is to slather it on buttered toast. BUTTT when im feeling extra decadent though, I’ll make my Lazy Blueberry Oatmeal Streusel Loaf and generously spread some on a piece or two:-)

Ingredients

  • 2 cups fresh or frozen blueberries, if fresh wash them first
  • 1/2 lemon, zested and juiced
  • 2 cinnamon sticks
  • 2 tbsp agave syrup
  • 1 generous tbsp vanilla extract
  • pinch of salt
Instructions

Add all ingredients to a small sauce pot over medium heat on the stove.
Simmer blueberries over medium low heat for 30-40 minutes, no need to stir occasionally, just once or twice is fine. Compote is ready when it has reduced by a quarter and it looks glossy.
Turn off the heat and transfer the compote to a jar, it'll thicken up as it cools.
Grab some bread, toast it up, slather some butter and generously spread on the compote.

  • The compote will hold for 2 weeks in the fridge.
