Waffles, a food that has gone through the ages, yet has still remained popular to this day, with good reason. They're easy, quick and can take on a plethora of toppings, sweet or savoury.


What was new to me, though, was using yeast instead of baking powder and...it was amazing!


The waffles are very light and have crispy shells with great structure that stay even after the waffles have cooled.

The inside is moist and springy, a great counterpart to the shell.


There will be a prevalent smell of yeast, but the mellow scent and flavour pairs so well with maple syrup, my go-to topping for these yeast waffles.

Ingredients
The batter
  • 1½ cups (340g) lukewarm milk
  • 1½ tsp instant yeast
  • 2 tbsp honey
  • 6 tablespoons or 85g butter, melted
  • 2 cups (240g) all-purpose flour
  • pinch of salt
  • 1 tsp vanilla extract
  • 2 large eggs, lightly beaten
Instructions
The batter
In a small bowl, combine yeast, warm milk, and honey. Let sit for 5 minutes until frothy.
In a large bowl add and combine flour and salt. Pour the yeast mixture, a lightly beaten egg, vanilla and melted butter. Using a whisk, mix well.
Cover the bowl and leave it at room temperature until the batter is bubbly and has doubled in size.
Preheat your waffle iron. Spray with nonstick vegetable oil spray, and pour the batter amount that is recommended by the manufacturer. Cook until the waffle is golden brown. Served with maple syrup, honey, jam, fried egg ,bacon or anything you like.
