Lucuma is a fruit native to Peru. You can find the frozen fruit puree at any good Latin supermarket. This Peruvian superfood was called the “Gold of the Incas”. Check out the recipe for Lucuma Ice Cream – a Peruvian superfood for a delicious ice cream full of superfood goodness.

Pio Pio is a popular NYC food chain that has popularized Peruvian food, however, now some people think Peruvian food is all about Rotisserie Chicken. It is so much more. It is a diverse cuisine and like any country has regional differences.
There is the European influenced cuisine of the capital in Lima and there is the indigenous influenced cuisine in the mountains and pueblos (villages). Then there is the African influenced cuisine in the Southeast, especially in Cuzco, where much of the African descended population lives.
For me going to Pio Pio is akin to going to KFC. I instead prefer the traditional foods I get at Urubamba Restaurant in Jackson Heights. Here I get things like Goat Stew, Beef in Cilantro Sauce, Tacu Tacu (Rice and Cranberry Beans), Anticuchos (Fried Sweetmeats), Picarones (Sweet Potato Pumpkin Doughnuts), Chicha Morada (Blue Corn Beverage) and Ceviche.
The best part of the meal at Urubamba are the summertime desserts of helado de lucuma and helado de cherimoya (custard apple ice cream). For the non Spanish speakers, helado is ice cream. Both of these fruits are native to Peru. Cherimoya tastes a bit like bubble gum. With its custard like texture, it is known as the ice cream fruit.
The lucuma is just as delicious. It tastes kind of like a custardy mango or pumpkin, with slight smoky flavors as if cinnamon or nutmeg had been added. I haven’t been able to locate the fresh fruit here in the US, but the frozen fruit puree is available at good Latin Markets.

Lucuma is very healthy, rich in iron, protein, calcium and zinc. Americans have recently discovered this and now you can often find the powder at health food stores and gourmet supermarkets like Whole Foods and Fairway.
Let’s hope lucuma doesn’t have the same fate as quinoa, making it so expensive for the locals so they can no longer afford the healthy food of their ancestors. Not only healthy, but it is super delish!
There are a few flavors whose fragrance is so intoxicating, it puts you on a natural high. For me, those three ingredients are saffron, cardamom and lucuma. Hours and hours after cooking with it, it still perfumes the entire apartment. If you like the heady aromas of cardamom and saffron, you will also fall in love with lucuma!
I’ve already made a lightened up Vegetarian (eggless) version of Lucuma Ice Cream here, but this time I decided to go for the traditional version.

I love tomato season I love this time of year. It’s the time of the harvest and there’s such an abundance of fresh vegetables available. So many of these veggies are available year-round but let’s face it, they taste best in season. For example, grape tomatoes, there’s a little extra sweetness in every bite. I bought them in bulk last week and snacked my way through in two days. Tomatoes are the star of this Grape Tomato Mozzarella Salad This recipe his heavily adapted from one of my America's Test Kitchen cookbook s. It takes the grape tomato from snack to salad while still maintaining a “star of the show” status. The flavors are reminiscent of my Caprese Pasta Salad, only without the pasta. So, if you prefer a low carb version, this tomato salad might be for you! How to make Grape Tomato Mozzarella Salad The challenge with juicy tomatoes The juiciness that makes tomatoes so tasty can sometimes be a drawback in a salad. Too many cut tomatoes = soupy liquid in the bottom of the bowl. So this recipe treats the tomatoes first with a little sugar ‘n salt and then the liquid is separated out to become the base for the dressing. Shopping opportunity! Owning a salad spinner would come in real handy for this. Since I do not, I’ll lead you through my workaround. (And maybe go shopping later). Extract the juice for the dressing First, cut the tomatoes and place them in a bowl with ½ tsp sugar and ¼ tsp salt. Mix and let sit for at least 30 minutes. Then, transfer the tomatoes to a large colander placed over a bowl.
Although this is a cod with mango dish, I adapt the recipe for Hubs who doesn’t like fish. Do you have picky eaters in your household too? If so, you can make this same dish, but just switch out the protein. So while I make this with fish for me, I cook chicken for him and serve it with the same mango and avocado slaw. I find that I can eat these with zero effect on my blood glucose levels. They are packed with protein and very little carbs. These are not completely sugar free. However, if you want to make them sugar-free, then you can omit the drizzle of chocolate at the end.Low-carb Peanut Butter Cookies do use artificial sweeteners. You will need to find one that measures 1:1 with sugar. Also, check the label to make sure that it does not contain sugar. Some sweeteners use a blend of sugar and artificial sweetener. I realized pretty quick that they can be tricky that way. I used a pure stevia powder in this recipe. I prefer stevia over some others because I like to keep things as natural and wholesome as possible.This recipe also calls for natural peanut butter. This is another area where brands can try to trick you. Some so-called natural peanut butters contain sugar. Check the label to make sure that the only ingredients are peanuts, peanut oil, salt. There shouldn’t be anything else. I have found that “no-stir” usually means added sugar.Lastly, dark chocolate. This is where the sugar in the recipe comes from. The darker the chocolate, the less sugar. So if it says 72% for example, it has less sugar than a bag that says 60% dark chocolate. What says summer more than a delicious fruity mixed drink? Most Caribbean islands make a version of Rum Punch, since each island distills their own rum. With sugarcane being a major crop in the Caribbean, rum production is a natural result. Therefore, most Caribbean cocktails use rum as a base for cocktails. We even make Vanilla Extract in rum, instead of vodka. In fact, in English Speaking Caribbean Islands, bars are more often called the Rum Shop, unless it is a high end place. The Rum Shop is where you go for drinks and small snacks to eat. However, there’s a twist that makes Haitian Rum Punch a little different than most Caribbean Rum Punch. Summer break has started & since there aren’t going to be any overseas trip this year, kids wanted to recreate pizza workshop we took in Tuscany, at home🥰 We made fresh Rosemary garlic pizza dough & fresh puttanesca pizza sauce to keep it authentic. Oh, how I love fresh strawberry season! Red, ripe, juicy, fresh summer strawberries are one of life’s simple pleasures. Picking them yourself from a locally-grown patch makes them even better! Strawberry season around here was nearing its end, and we had been talking about going, but hadn’t made it yet. When we got up that morning, the weather was on the cooler side compared to how it had been, so we decided that if we wanted fresh strawberries, this might be our last chance!We poured our coffee into travel mugs, applied some sunscreen and headed out. We got there just slightly ahead of the majority of people, which was nice. We were able to choose a row a bit away from where anyone else was picking, and remain socially-distanced.Strawberry picking is kind of nostalgic for me. I have clear memories from my childhood of picking strawberries (and cherries, and apples, and rhubarb and peaches…) at a family farm, and then being in the farmhouse kitchen with my grandmothers and mom while they washed and prepared all that fruit for canning and/or freezing.Plus, it was just nice being outside, chatting and laughing as my husband and I each crawled up opposite sides of our row, searching for the best berries. I don’t know about you, but as soon as the weather gets warm, all I want to eat are salads. Beef broccoli stir fry proves to make an amazing midweek dinner, just add some rice and you've got a lovely meal ready to go. I love how the long cooking process allows for both the beef and the broccoli to soften dramatically while constantly being infused with the ample sensational soy sauce. I highly recommend to serve the stir fry over a bed of rice or to mix it in with thick egg noodles, as the sauce is delicious and it would be a shame not to take maximum advantage of. Refrigerate leftovers in an airtight container for up to four days.
