Lemon Bars

Can I start by telling you how much I love anything lemon. My hubby who is not a lemon fan loves these. They are not so smack in your mouth tart lemon but more creamy but shortbready (I know not a word but I made it up) because these bars are that good. And did I mention so easy to make.

Your first thing to do is make the crust. Mix your confectioners sugar, flour and butter together. I have done this with a mixer and by hand, both work well. After is is all combined well pat in a 9″x13″ pan. The best way I have found to do this is with your hands. Pat until even and bake in a 350 degree oven for approximately 20-25 minutes.


While your crust is baking mix up the custard goodness! Beat four eggs on high until frothy. You can see it getting foamy here. It takes a couple of minutes so be patient.

Then add your lemon juice, lemon rind, salt, flour and sugar. Mix until very well combined. When your crust comes out of the oven slowly pour the custard mixture over it. Return to the oven for another 20-25 minutes.

After it has cooled take some confectioners sugar and put it in a sifter and sift over the entire bars. Makes it extra special!
