I'm coming at you with another fresh, simple, and delicious meal idea that is packed with everything your body needs.

Roasted veggies, juicy fish, and perfectly al'dente limey rice - this combo will steal your heart! Incredibly nourishing after a long day at work and amazing fuel after a workout. Fuel your body and fuel it good - it deserves all your love!

You can substitute these veggies for any other type fo veggies you like, however, I believe that carrots add this nicely sweet touch to this dish and work so well with slightly sour rice.

Ingredients

  • 300g salmon
  • 4 carrots
  • 200g sugar snap peas
  • 80g scallions
  • 160g rice
  • 4tbsp lime juice
  • 2 tbsp soy sauce
  • 4 tbsp teriyaki sauce
  • 2 garlic cloves
  • salt and pepper
Instructions

Preheat the oven to 200C.
Cut veggies into smaller pieces and add seasoning - salt, pepper to taste, and soy sauce.
Transfer veggies onto a baking tray and bake for 25mins.
Spread teriyaki sauce onto your salmon and place thinly sliced garlic on top. Wrap it in tin foil and place it in the oven too - for roughly 10-15 minutes (or longer, depending on how powerful your oven is - make sure to check regularly).
In the meantime, cook rice by following the instructions on the packaging.
When everything is done, transfer it onto a plate. Mix rice with lime juice.
Garnish with chopped scallions.
