This has to be for sure one of the best salmon recipes I've ever had! I've been waiting to try it for a while and I'm so glad I did because it was absolutely delicious. Bob Ross says that in painting there are no mistakes, just happy accidents! I think the same is true about cooking. It was my first time trying to make fresh pesto sauce and I accidentally added too much parmesan cheese, but it turned out being the best accident because it added such a unique flavor to the mix and we absolutely loved it! 😄 I'd like to hear about some of your "happy accidents" in the kitchen ❤ so tag a friend and share your happy accidents in the comments section 😊⬇️

Ingredients
Pesto sauce
  • Handful of fresh basil
  • 1 tablespoon parmesan cheese but I ended up adding close to 2 or 3
  • 2 garlic cloves
  • 1 lemon juiced
  • 1 tbsp olive oil
Salmon filet
  • 1 fresh Salmon filet
  • 2 cups Cherry tomatoes, halved
  • 1 bunch asparagus
  • 2 lemons juiced
  • Olive oil
  • Salt and pepper to taste
Instructions
Baked salmon
In a baking pan, place the salmon skin down
Add lemon juice, olive oil, salt and pepper and work it through the salmon
Add the pesto sauce, cherry tomatoes and asparagus.
Cover in tin foil or with dampened parchment paper, make sure you keep on dampening it.
Bake the salmon for about 30 minutes on 450, then remove the cover and let it bake for 10 more minutes.
serve while hot with your choice of veggies, bread or grains.
Pesto sauce
Add all the ingredients in a blender or a hand mixer and blend until soft and smooth.
Tips
  • I served this with a side of brown rice and Mediterranean salad.
  • You can have it on its own or with steamed or baked veggies.
