These chicken yassa fajitas - made with diced chicken breasts - fried with sliced onions and bell pepper - with a touch of zest and spice are the perfect quick/easy weekday fix!


Nothing is better than a warm tortilla wrap stuffed with warm/juicy bits of chicken and veggies, oozing with a creamy dressing or condiment of your choice.

Ingredients

  • 4 Tbsps. Extra virgin olive oil
  • 1 Lime
  • 4 large chicken breasts (diced)
  • 1 medium sized onion
  • 1 bell pepper
  • 1 Tbsp. black mustard seeds
  • 1/4 scotch bonnet pepper
  • 1/2 Tsp. apple cider vinegar
  • 1/2 Tbsp. salt
  • 1/2 Tbsp. coarse black pepper
  • 2 Tbsp. dried chives
  • 1 Tsp. garlic powder
  • 1 Tsp. ground cumin
  • 2 Tsps. sugar
  • For serving
  • 5 medium sized tortilla wraps
  • For the dressing (optional)
  • 3 Tbsp. mayonnaise
  • 1 Tsp. paprika
  • 1/2 Tbsp. Dried chives
  • 3 Tbsp. lime juice
  • 1 scotch bonnet pepper
Instructions

Start by preparing the vegetables. Slice the white onion and bell pepper and then leave to the side.
Cut the a 1/4 of scotch bonnet and then leave the rest for the dressing.
Heat the olive oil in the pan and then once it's heated up, add the chicken. Fry for 10 minutes. Halfway through the cooking process, add the onions, pepper, the 1/4 scotch bonnet, the juice of 1 lime and the apple cider vinegar - along with salt, pepper and the rest of the ingredients. Stir and combine until the chicken has fully cooked. Grate some lime zest to give the dish a more zesty taste and feel.
Heat Some tortilla wraps, either over a gas hob or in the microwave for 30s (900W).
[OPTIONAL] Start preparing your dressing by combining the mayonnaise, dried chives, paprika and lime juice. Squeeze the rest of the scotch bonnet from before into the dressing. Add more lime juice if necessary.
Assemble your fajitas to your preference and serve.
