Triple Chocolate Pancakes

These pancakes contain a special ingredient to make them EXTRA flavorful – chocolate milk! The topping options are endless, and they are the perfect morning treat. I have included ingredients and instructions for two different toppings - chocolate ganache or a simple frosting drizzle. But you could also top them with syrup or melted peanut butter. Then sprinkle with strawberries, bananas, blueberries and/or extra chocolate chips and you're set!


My favorite milk to use in these is Organic Valley's 1% chocolate milk, but you can use whatever you have on hand. White milk can also be substituted, but the chocolate milk really helps to bring out the chocolate flavor within the pancakes.

These pancakes contain THREE types of chocolate in the form of cocoa powder, chocolate chips and chocolate milk.

Ingredients

For the Triple Chocolate Pancakes

  • 1¼ cup all-purpose flour
  • 3 tablespoons cocoa powder
  • 3 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ¼ cup vegetable or canola oil
  • 1 teaspoon vanilla extract
  • 1¼ cup chocolate milk (white milk can be substituted)
  • 1 egg
  • ¾ cup chocolate chips (semi-sweet recommended)

Chocolate Topping (optional)

  • ½ cup heavy cream
  • ¾ cup chocolate chips semi-sweet recommended

Frosting Drizzle (optional)

  • 2 cups powdered sugar
  • 2-4 tablespoons milk or water
  • 1 teaspoon vanilla extract

Instructions

To make the Triple Chocolate Pancakes

In a medium-large bowl, whisk together dry ingredients (flour, cocoa powder, sugar, baking powder, salt).
Add in all of the wet ingredients (oil, eggs, chocolate milk, vanilla extract) and beat well (using whisk or electric mixer).
Add in chocolate chips and incorporate well.
Heat a large skillet or frying pan and grease it well. Pour large round dollops over the heated pan to create pancakes (⅓-½ cup of batter). Cook the first side for 30 seconds- 1 minute or until the edges and middle begin to bubble. Flip over and cook the other side.
Cover the pancakes with chocolate ganache, frosting drizzle, syrup and/or your favorite fruits and enjoy!

To make the chocolate ganache

Use the microwave or stove to heat heavy cream until it is just about to boil.
Gently stir in chocolate chips. Stir constantly until the mixture is smooth. Drizzle over the top of your pancakes.

To make the frosting drizzle

Combine powdered sugar, vanilla and 2 tablespoons of water or milk. Mix well with whisk or fork.
Add additional tablespoons of water or milk to reach desired consistency. Drizzle over the top of your pancakes.
