Beyond Meat Cabbage Stir Fry (Low-Carb & Vegan)
If you’re a fan of deconstructed egg roll bowls, you’re going to love this super healthy cabbage stir fry! Made with Beyond Meat Beyond Beef, it’s low-carb, vegan and gluten-free! Plus, it’s a super quick and easy, one-pot meal that is ready in less than 15 minutes from start to finish.
Sautéed garlic, ginger, sesame oil and coconut aminos combine for the perfect egg roll flavour, while the lightly cooked coleslaw mix brings a crispy, satisfying texture! As written, the recipe serves three people, but it can easily be doubled for a larger group or family. Each serving has 27g of fat, 23g of protein and 7.5g of net carbs but can be adapted to fit a keto diet with just a few simple tweaks!
One cup of cabbage has 5g of carbohydrates, 3g of which are fiber. So, with a total of just 2g net carbs per cup, cabbage is actually a great option for those following a low-carb or keto diet! In fact, I think of cabbage much like I do cauliflower or zucchini. It’s a super versatile vegetable that can be used as a replacement in recipes for higher-carb food options such as rice or noodles. Cabbage is also a great ingredient to have on hand in your low-carb or keto kitchen because it has a long shelf life and a very budget-friendly price point. You can get a full head of cabbage for $5 or less, or buy bags of pre-shredded cabbage for about $2 each. The total cost of this recipe is roughly $15, which comes out to just $5 per serving, making it an affordable but healthy option for you and your family!
This cabbage stir fry is probably the quickest, easiest and more cost-effective recipe on The Bespoke Bites. Using just a handful of inexpensive ingredients, the whole dish comes together in one pot in under 15 minutes and is totally foolproof. I tend to make this recipe on days when it’s suddenly 6pm, I’m starving, and I’ve given no thought to what dinner might be. Which, if I’m being honest, is at least once a week.
To make this cabbage stir fry you’ll need:
- Sesame oil
- Garlic and ginger
- Beyond Meat Beyond Beef
- Cayenne and black pepper
- Coconut aminos (or soy sauce- read below)
- Coleslaw mix (pre-shredded for convenience!)
- Green onions and sesame seeds (to top)
Start by heating the sesame oil in a large pot over medium heat. Add the garlic and ginger and sauté for a minute or two before adding the Beyond Meat Beyond Beef. Break up the Beyond Meat with a wooden spoon until it resembles ground beef and add the cayenne, black pepper and coconut aminos. Cook for three minutes.
Finally, add the coleslaw mix and sauté another two minutes, or until the cabbage just starts to soften. Scoop the cabbage stir fry out in to three bowls, top with green onions and sesame seeds and enjoy!
If you don’t follow a vegetarian or vegan diet, this recipe is also super delicious with ground beef or turkey. Use about 3/4 to 1 lb of either meat instead of the Beyond Meat Beyond Beef. The ground beef or turkey will also decrease the total net carbs in each bowl of this cabbage stir fry.
I used coconut aminos in this recipes instead of soy sauce because it’s a lower sodium option and because I have a sensitivity to soy. That said, coconut aminos aren’t for everyone. While lower in sodium, this soy sauce-substitute does contain a few grams of sugar per serving. When used in this recipe, it is fine for a low-carb diet, but if you follow a strict keto diet, I recommend using 3 tablespoons of soy sauce instead!

- 1 tablespoon sesame oil
- 2 garlic cloves, minced
- 1 tablespoon minced ginger
- 1 pack Beyond Meat Beyond Beef
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 3 tablespoons coconut aminos
- 4 cups coleslaw mix
- 1/4 cup green onions

- Add the Beyond Meat Beyond Beef, breaking it up with a wooden spoon or spatula. Add the black pepper, cayenne pepper (optional) and coconut aminos. Sauté for 3 minutes.
- Add the coleslaw mix and stir to combine. Sauté until the cabbage just starts to soften; about 2 minutes.
- Divide between three bowls, top with green onions and sesame seeds and serve.
