Easy Italian Marinated Skirt Steak is a delicious dinner recipe! This simple steak is packed with Italian flavors then seared to perfection.


This steak is great for meal prep, a keto diet, an easy lunch idea, or simple dinner recipe.


I love pairing this steak with a simple salad, but you can add this to just about anything!


Steak can be incredibly intimidating for some people. It’s expensive and easy to mess up, making it a very overwhelming protein if you’re new to cooking.


Luckily, this recipe takes the guesswork out of cooking steak. All you need to do is marinate, sear both sides, and you’ll have a steak cooked to perfection.


I suggest cooking this steak recipe in a cast iron skillet. The cast iron skillet is a great uniform heat source. It also gives the steak a really nice sear that adds texture and flavor.


Ideally, skirt steak is cooked at a rare or medium rare temperature. This will give you the most tender result, because as the steak cooks longer, the texture will become tougher.


Cooking the steak at 6 minutes a side in a hot cast iron skillet will give you a perfect medium rare to rare steak.


Using a meat thermometer always helps, too. That way you know the exact doneness of your steak.


After your steak is cooked, it’s time to sit and serve.

Ingredients

  • 2-4 lb skirt steak
  • 1/4 cup olive oil
  • 1 tbsp lemon juice
  • 1 tbsp balsamic vinegar
  • 1 tsp chopped rosemary
  • 1 tsp chipped thyme
  • 6 cloves garlic
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1/2 tsp red pepper flakes
  • 1 tbsp canola oil
  • Fresh basil, for serving
Instructions

Add steak to a large container or plastic bag.
Combine olive oil, lemon juice, balsamic, rosemary, thyme, garlic, salt, pepper, and red pepper flakes. Mix well.
Add marinate to the steak and ensure steak is coated well.
Refrigerate and marinate at least 4 hours and up to 24 hours.
When ready to cook, remove from the refrigerator for at least 30 minutes.
Preheat a cast iron skillet on medium heat. Add canola oil. Sear steak 6 minutes a side, then transfer to a plate and take temperate. For rare steak, you’re looking for 125 degrees F. Cook until desired wellness.
Let steak sit for at least 5 minutes before cutting. Serve with fresh basil.
