Fancy Smoked Salmon & Toast

Let me just say, I've never really "gotten" the whole charcuterie, why pile your pancakes on a cutting board with bacon and eggs and stuff...won't it all get cold by the time you serve it? Sorry, but I have to be honest! However, they do seem so fun to make, and with this combination, I normally put it out on a dish, or in individual dishes anyway, so I figured, "Why not try it out charcuterie-style?". And as you can see, it was pretty photogenic. The only thing that really can be classified as a "recipe" here, is the homemade whipped cream cheese...and that's just too easy. It's also ESSENTIAL to the flavor profile of this brunch. So keep reading, and get your charcuterie on!

  • 4 pieces Angelic Bakehouse sprouted grain toast
  • 2 fried eggs (I like mine soft, but to each his/her own)
  • many as you like. We like A LOT of capers :p
  • Arugula
  • Approx. 4 oz. Smoked salmon (enough to top 4 pieces of toast)
  • Whipped Chive Cream Cheese (recipe below)
  • Everything Bagel seasoning (optional, but kind of essential)

Whipped Chive Cream Cheese

  • 6 Tbs. Cream cheese
  • 1 Tbs. Milk
  • 2 Tbs. Dried Chives
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • (salt and pepper are really to taste, but these measurements are approximate)
  • Everything Bagel seasoning (optional)


For Cream Cheese

Whip cream cheese and milk together until light and fluffy.
Fold in chives, salt, and pepper. Top with Everything Bagel seasoning if desired.
