Fried Egg and Tomato toast is a hangry girls best friend. All you need is a few minutes, and the hangry beast within will be satisfied. I’m not even joking.. well maybe just a little lol

Toasts are literally the perfect vehicle for getting food into you as quick as possible. There are so many variations of this too, pretty much guaranteeing you’ll never get bored.

The only real cooking here is in the frying of the egg and yes I know you’re hangry and just want to stuff your face but come on… just cuz your’e hangry doesn’t mean you can’t eat well. The goal is to stuff our face with deliciousness and not crap, so lets put the twinkie down (I think I just dated myself with the mention of the twinkie, lol whateverz) and fry the egg 😉

You don’t like fried eggs, fine.. scrambled works. Hard or soft boiled eggs also work and let’s not forget poached. Not a fan of tomatoes?? cool. Sub any other veg. Sautéed greens are fantastic, avocados are always a good idea. Mushrooms are absolutely amazing on toast too. The possibilities are endless, literally.


If you don’t like mayo, you can use a smashed avocado or hummus, mustard works too. I think you get it by now that this Fried Egg and Tomato Toast is just a guide recipe.. Make it your own 😉 One last thing,You can dress this simply with salt and pepper, a drizzle of extra virgin olive oil. Ingredients

  • 1 slice of bread.. your choice of bread
  • 1 plum or beefsteak tomato, cut into slices
  • 1 egg
  • 1 tbsp neutral or extra virgin olive oil
  • chili oil, optional but why the hell not if you have it
  • mayo*
  • salt and pepper to taste
Instructions

Toast your bread, set it on a plate, slather the mayo on and add the tomatoes, season with a dash of salt. set aside
Crack the egg into a small bowl or cup, set aside
Place your pan over medium high heat on the stove and add the oil
When its hot, pour the egg into the middle of the pan, turn the heat down slightly and cook for 2 minutes. After 2 minutes, place the lid or plate on top, turn the heat down to medium low and cook for an additional 2--3 minutes, if you prefer a harder yolk leave it for another minute or so.
Lay the egg on top of the tomatoes on the toast and season with salt and pepper, then add as much chili oil as you like
Devour!
Tips
  • Will need: small saute pan, a lid that fits the pan or a plate, a small bowl cup. toaster-optional. you can toast the bread in the pan too or under your broiler
