With minimal sugar, but maximum flavour these rich, dark, chocolatey squidgy Courgette Brownies are a delicious healthy alternative to this classic sweet treat. The juicy, but mild flavour of the courgettes gives the brownies a gorgeously gooey texture. And the walnuts give a nice nutty crunch. Super simple to make, and perfect with a pot of tea or coffee.


Fancy pecans or pistachios over walnuts? Swap it! In need of a little more indulgence…? Squish a handful of dark chocolate squares into the mixture before popping in the oven to bake.

Ingredients

  • 2 eggs
  • 1/4 cup raw sugar
  • 1 tsp vanilla extract
  • 1 courgette
  • 1/8 cup maple syrup
  • 4 tbsp coconut oil
  • 1/2 cup plain flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 2/3 cup cocoa powder
  • 1/2 cup walnuts pieces
Instructions

Preheat the oven at 180°C/160°C fan and line the bottom and sides of 20x20cm baking tin with baking parchment paper.
Whisk the eggs, sugar and vanilla in a large bowl until creamy.
Coarsely grate the courgette - if it’s a particularly juicy one, squeeze away any excess juice before adding to the bowl. Give the mixture a good thorough whisk.
Add the coconut oil, maple syrup, cocoa powder, flour, baking soda and salt. Time to give it another good mix. (At this point you may want to switch up the whisk for a wooden spoon).
Gently fold the walnut pieces into the mixture and pour into the lined baking tin.
Pop your brownies into the oven to bake for approximately 25 minutes. Be careful not to over bake - for gorgeous gooey brownies use a cake tester from 15 minutes onwards, checking at 5 minute intervals. Remove from the oven when optimal gooeyness is achieved!
