My Grandma's Traditional 'Túrógombóc' With Poppy Ice-Cream and Pear

I have loved 'túrógombóc' since I was a child. If you haven’t heard of it, basically it is a traditional Hungarian dessert and it literally means “cottage cheese balls”. I grabbed my grandmother’s recipe, spiced it up with a little bit of lemon zest, cinnamon, plus, what really adds to this dessert and makes it DIVINE is the poppy ice cream, braised pears, and crispy hazelnuts on top. And if you’re not a huge fan of poppy seed, feel free to use any of your other favorite ice creams. I hope you will give this recipe a try and familiarize yourself with Hungary and its cuisine.

Ingredients
For the cottage cheese balls
  • 450 g (15 3/4 oz) cottage cheese
  • 150 g (5 1/4 oz) grits
  • 80 g (2 3/4 oz) butter/margarine
  • 2 eggs, separated
  • pinch of baking soda, salt, cinnamon
  • zest of one lemon
  • vanilla sugar/powdered sugar
For the crumble
  • 50 g (1 3/4 oz) of butter
  • 200 g (7 oz) of breadcrumbs
  • cinnamon
For the baked pear
  • 3 pears
  • cinnamon
  • honey
Instructions

In a big mixing bowl whisk the butter and egg yolks together. Add the cottage cheese, the grifts, salt, cinnamon, lemon zest, sugar and baking soda.
Whisk the egg whites and add that to the mixture too. Let it rest for at least 30 minutes.
Preheat oven ti 350F/180C. Peel the pears, cut it into small cubes. Put them into a sheet pan, sprinkle some cinnamon all over, drizzle with honey. Bake them for 20-30 minutes.
Meanwhile make the crumble. In a frying pan melt the butter, pour in the breadcrumbs, a pinch od cinnamon, roast it for a couple minutes and you're done.
Using your wet hand shape the dough into small balls, in sparkling water cook them for 10 minutes.
Roll the balls into the crumble, serve them with poppy ice-cream, pears and some extra crumble if desired. Sprinkle some hazelnuts over for ''something crunchy''.
