Dalgona Chia Pudding

Coffee, it purges your morning sleepiness with pleasant bitterness, brandishing it's beautiful colour, with it's fluffy texture laid upon a jiggly bed of creamy goodness. Fluffy? Bed? That's right! This is the dalgona coffee chia pudding, a filling and energy inducing breakfast or afternoon pick me up.


It's up to you how thick you want your dalgona to be, I tried out both whipping my dalgona to be the consistency of whipped cream, and made another where it was whipped to a point where it could easily be poured.


Feel free to mix in cocoa powder in your chia pudding to make a 'mocha'.

Ingredients
Basic chia pudding
  • 3 tbsp chia seeds
  • 1 cup (250ml) milk
  • 1 tbsp agave syrup or honey
  • ½ cup vanilla yogurt, to layer between chia and dalgona.
For dalgona
  • 2 tbsp instant coffee powder/granules
  • 2 tbsp granulated sugar
  • 2 tbsp cold water
Instructions
Basic chia pudding
Mix all ingredients and let rest in the fridge in an airtight container for at least 1 hour.
For dalgona
Mix the instant coffee powder, sugar and water in a medium container.
Whisk using an electric hand mixer, electric milk frother, or whisk manually with a normal whisk.
Whip until smooth, fluffy and shiny. Depending on how long you whisk, you can have a consistency ranging from more liquid to more stiff.
First layer is the chia pudding, then yoghurt and whipped dalgona.

    I don’t quite understand the recipe, does whipping just 2 tbs coffee, water and sugar really whip to that consistency

      Yes it does! I've tried it but be sure to used instant coffee powder. Can't do it with your leftover brew.
