Edible cookie dough made with chickpeas? Yes, it’s a thing! I was a bit hesitant to try this out but it honestly turned out great. At first, a lot of the chickpea flavour/texture came through but I continued to add more ingredients to mask it and it has helped! This high-protein snack is great for keeping you full. You can eat this cookie dough on its own, as a “dip” for your fruits or as a topping to some ice cream! Ingredients

  • 200 grams chickpeas (drained, washed and peeled if using canned)
  • 3 tbsp almond butter
  • 3 tbsp maple syrup
  • 1 tbsp vanilla extract
  • 2 tbsp oat milk
  • 3 tbsp almond or oat flour
  • 1/4 cup chocolate chips
Instructions

Blend everything except the chocolate chips together in a food processor.
Taste the batter and adjust as needed! Depending on your preferences, you might want to add more maple syrup, nut butter and/or vanilla extract to mask the taste of the chickpeas.
Stir in chocolate chips and enjoy!
Tips
  • Feel free to adjust this recipe, specifically the amount of sugar, nut butter and vanilla and these three items will truly help to cover up the chickpea taste!
