Quiche is such a versatile bake because you can put any filling inside and it will pretty much turn out absolutely delicious! They're very easy to make vegetarian which makes them extra appealing. Quiches are great for emptying out the fridge and for dressing up breakfast on the weekends!


The quiche pictured in this recipe is a short-crust based quiche filled with butternut squash, leeks, yellow onions, garlic, and turkey lunchmeat, topped with bacon bits, however the recipe below outlines the base for you to use in order to build your own quiche. Use any fillings and toppings you desire to create the quiche of your dreams!

Ingredients
CRUST
  • 8.9oz (1 cp + 1 tbsp) all-purpose flour
  • 6g (1 tsp) sea salt
  • 113g (1 stick butter, straight from fridge or 1 stick margarine)
  • 15-30g (2.5 tbsp) cold water
FILLING
  • 3 lg eggs
  • 360g (1 1/2 cps) whole milk, coconut milk, or combination (for a creamier quiche, use heavy cream)
  • 60-80g (1/4-1/3 cp) shredded cheese (mozzarella, gruyere, swiss, cheddar, etc....)
  • 140-180g (1 - 1 1/2 cps) of your choice of fillings, cooked (leek, mushroom, butternut squash, onion, ham, chicken, etc...)
  • 6-10g (1-2 tsp) of seasonings like ground nutmeg, fresh herbs, etc...
Instructions
CRUST
In the food processor: pulse salt, flour and 30g (2 tbsp) sized tabs of butter until butter is almost pea sized.
Add only enough water to bring the dough together to work by hand.
When it resembles a coarse crumble that sticks when pinched, remove and work into a disc. Fridge for 30 mins before rolling out 1/8"-1/4" thick to place into your pan.
You can choose to blind bake the dough if you like. This will reduce the dreaded soggy bottom!
Prick and bake for 10-15 mins at 375F.
FILLING
Cook your filling ingredients with your seasoning/herbs of choice. Set aside.
Whisk together the eggs, milk and shredded cheese.
When the cooked filling is cooled, combine with the wet mixture and pour into the crusted pan.
Bake at 375F for 30-45mins or until a toothpick comes out clean and the top is nicely browned.

    Where are instructions on how,and when to use the rest of the butter in the ingredient list?

      Hello! You use the whole stick of butter for the crust. Rather than putting the entire stick into the food processor, I cut the stick into 2 tbsp (30g) sized tabs/squares so it makes it easier to pulse into the flour. Sorry for the confusion.
