Refreshing Watermelon Salad

If you are looking for a fun way to change up your salads this summer season, look no further! This sweet and savory salad is so delicious and makes an outstanding side for your summer dinners. I especially love it with some grilled chicken and fresh corn on the cob. To me it is the perfect salad to bring to a summer bbq.

The watermelon is so unexpected but it’s surprising how well it pairs with the feta cheese, cucumber and fresh mint. I could seriously eat this all summer long, it is so refreshing on a warm day.

This salad tastes fantastic on its own, but I like to bump it up a notch and drizzle on a simple homemade lemon vinaigrette for a little extra flavor. I find that this brings the whole salad together and enhances the flavors of the other ingredients.

It is hard to resist eating something that is this bright and colorful! I guarantee this salad will become a favorite for you too this summer.

Begin by cutting the watermelon into bite sized cubes.

To me this looks good enough already! Nothing beats fresh cold watermelon on a warm day.

Next you want to chop up one cucumber, 1/2 red onion, and 1/4 cup fresh mint. Add 1/2 cup of crumbled feta cheese.

Mix together 3 tbsp of olive oil with 1 tbsp of lemon juice and 1/2 tsp of salt.

Pour the dressing over the salad.

Gently stir the salad to evenly incorporate, being careful not to crush the watermelon.

And there you have a beautiful and delicious watermelon salad.

TIP: This salad tastes the best when it is cold, so I recommend chilling the watermelon and cucumber in the fridge before assembling or keeping the salad in the fridge for an hour before serving.
