Easter and Deviled Eggs

I enjoy cooking for special occasions, like the holidays... but Easter Sunday, let's just say it was not my day... do you recall the show called Whatever Martha where her daughter, Alexis Stewart, and her cohost Jennifer Koppelman Hutt debunk Martha's projects and her previous showings from the 90's? Well, I was ready to attempt to pull off a Martha Stewart Easter, but it ended up being quite the opposite!


Mr. Vintage kept asking me to make his Mother's deviled egg recipe and I agreed to give it a try on Easter. I had it all planned out... I was going to use my cake decorating kit to pipe the filling in, they were going to be beautiful! I had a plan, there was nothing getting in my way, it was going to go as I had envisioned in my head, well... you know how when you have a plan and it just does not come together? That was me on Easter Sunday!


I will tell you that I have tried to boil eggs so many times and I can never seem to get the shell to come away from the egg cleanly. BUT... I had success with that part! I was so excited... things were on track, it was going well... until I went to search for my decorating kit.

I found the nozzle, but the tips were missing! I kept seeing them in my mind and thinking I had put them down inside of something else, a basket, a container, they were somewhere in our kitchen, or maybe they were not even in the kitchen at all? We looked everywhere! Where ever they are, it was a really great hiding place because we spent about 45 minutes searching for them and came up with nothing. I need that bakers kitchen where everything has a place instead of always trying to find more storage...


I said, ok we can improvise, we will just use a baggie and clip a small hole and then decorate the eggs that way... oh NO, I am out of ziplock bags... I only had the flimsy baggies on hand that fold over... ok, more improvisiong it is...


I asked hubby for the exact measurements to the filling for the eggs. He tells me half cup of Miracle Whip, two tablespoons of mustard, and the egg yolks, mix it all together. I said are you sure? Yes, that is the recipe and then we sprinkle cinnamon on the top. I have asked many times if he was sure about the cinnamon since I have only ever known to sprinkle paprika on top. He always tells me yes, cinnamon! As it turns out, the cinnamon is actually pretty good, who knew? You may want to try this.


Ok, so I have everything in the bowl, searching for my beaters for my hand mixer, can I find them? I found beaters, but they do not match with my hand mixer, not sure what mixer they match, I have only had three mixers in my time... I did not want to get the big mixer out for such a small task. I continue to route around in the drawers and find a whisk with an end that seems to go inside of a mixer. Guess what? It works! Thank goodness! Hubby comes out and tastes it, wow! "That has a strong mustard taste, I do not recall it tasting like that!" Then he says ohhh... it was two teaspoons of mustard... I said well, that is kind of a big difference!

Well, no going back now... we have to keep moving... so the eggs had a very distinct mustard taste to them, oh well... live and learn...


I will give you Mr. Vintage's Mother's Deviled Egg Recipe below...

Ingredients

  1. 8 boiled eggs
  2. 1/2 cup Miracle Whip
  3. 2 teaspooons yellow mustard
  4. SALT & PEPPER TO TASTE
  5. CINNAMON


Procedure

  • Boil 1.5 qts of water in pan on stove
  • Once water has come to a full boil ladle eggs into water, careful not to break eggs
  • Boil for 12 minutes
  • Remove from stove
  • Let stand for 15 minutes in water
  • Drain and fill with cold water
  • Let stand for 10 minutes
  • Drain
  • Tap egg on counter, begin peeling, the shell should come away clean from the egg
  • Cut eggs in half remove yolks and place into bowl
  • Once all eggs have had shells removed and yolks removed you can begin preparing the filling
  • Add Miracle Whip, mustard and salt and pepper to taste
  • Whisk together
  • You can spoon the filling into each egg or pipe the filling into the eggs
  • Sprinkle Cinnamon on top of eggs
  • Chill and serve


There you have it, our Whatever Martha Easter Deviled eggs! I remember that show and I laughed today as I kept having one thing come up after another... I thought to myself, if I was Martha (which I most certainly am not anywhere near, but wishing I were!), she would have a coronary in my kitchen with all of this chaos happening.


Peanut had to get in the mix too, I gave him the white part of the egg and he spit it back out on the floor. I told him, you eat an egg every morning for breakfast and you spit this one out? Could be because there was no salt or pepper on it, spoiled pooch... he eventually ate it. He needed something to keep himself busy so he would stay out of trouble while I was trying to throw all of this together. I certainly did not need to add another difficulty to the mix...


By the time we had the eggs finished, I was like do I really want to keep going? I made the eggs and a cake at the same time... juggling too many things at one time or my multitasking abilities are rusty, not sure. I will know to make them the night before next time, AND I need to find my tips so I can practice my decorating skills. I have been wanting to try my hand at cake decorating for a while now and I thought the eggs would be a small enough project to practice on. I will let you know when I find them and how the cake decorating goes... I am sure it will be an eventful task, like most around here.
