DAIRY FREE COFFEE ICE CREAM RECIPE

It is no secret that we love coffee in our house.


Jesus, family, friends and coffee.


Coffee ice cream is one of our favorite treats around here, and as I have been on a mission to create diary free/gluten free recipes for my FASTer Way to Fat Loss clients as they give their digestive systems rest and reset their metabolisms, I figured it was worth trying to create the perfect dairy free homemade coffee ice cream recipe.


Friends. It is delicious. There is a hint of coconut flavor, but as someone who doesn’t even like coconut I can still vouch for how delicious and creamy this ice cream is!

Dairy-free Coffee Ice Cream Recipe

Ingredients

  • 14 oz unsweetened coconut milk
  • 1 c GF regular oat milk
  • 3/4 c sugar
  • 2 eggs
  • 3 tbsp instant decaf coffee
Instructions

Mix together the coconut milk, oat milk, 2 eggs, sugar and coffee.
Pour the ice cream mixture into the metal drum of the ice cream machine.
Pour ice around the drum approx 1/4 full. Sprinkle rock salt on top. Repeat the ice and the salt until approx 3/4 full (fill to the top if making a double batch).
Mix in the ice cream machine for approximately 20 minutes to desired texture.
Pour into a glass bread pan and freeze..
