Baked Tomato and Goat Cheese Dip is tomatoes and goat cheese baked with garlic and shallots for an unbelievably creamy dip recipe!

I’m sure you’ve seen the viral Tomato Feta Pasta recipe that is swirling the internet these days!


I tried it, didn’t love it, because well, I don’t like pasta…


But! I did come up with a DIP version that is super yummy!


Baked Tomato and Goat Cheese Dip is exactly what you need to make with the summer’s tomatoes!

How do you make Baked Tomato and Goat Cheese Dip?

First, gather your ingredients:

  1. Fresh tomatoes — the little ones!
  2. 3 cloves garlic, chopped
  3. 1 Shallot, chopped
  4. 4 ounces Goat Cheese
  5. 2 Tablespoons Olive Oil
  6. Salt & Pepper
  7. Fresh Basil
  8. Balsamic Glaze


Next, make this dip!

Start by adding tomatoes, garlic, and shallots to a baking dish. Drizzle with olive oil and give a sprinkle of salt and pepper.


Lay your goat cheese log in the center of the tomatoes, garlic, and shallots, and bake at 425˚ for 15-20 minutes.


When you notice the tomatoes have blistered and are turning brown, remove the dish from the oven and give it a good stir.


Bust the tomatoes as you stir, allowing them to release their juices and create a creamy dip. Yum!


Sprinkle fresh basil leaves that you’ve torn by hand into the dish (save some basil for garnish!).


Spoon the dip into a serving bowl, and drizzle with balsamic glaze and garnish with basil.


Enjoy with crispy crostini and watch this delicious dip recipe disappear!

Do I cut the tomatoes?


Nope! You just dump them in whole!


What if I don’t have goat cheese?


Totally fine! Just use Feta cheese!


What else can you use this recipe for?


If you end up with leftovers, you can reheat it on the stovetop in a pan and toss it with pasta, or spread over grilled chicken. I had some leftover and mixed in fresh spinach and stuffed it inside chicken breasts that I baked… YUM!

Ingredients

  • 1 pint Grape Tomaotes
  • 3 Garlic Cloves, chopped
  • 1 Shallot, chopped
  • 2 TBS Olive Oil
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 4 ounces Goat Cheese
  • 2 TBS Torn Fresh Basil Leaves, reserving a few for garnishing the top
  • Balsamic Glaze for drizzle
  • Crostini for serving
Instructions

Preheat your oven to 425˚.
In a baking dish, add tomatoes, garlic, shallots, olive oil, salt, and pepper and stir to combine.
Lay your goat cheese log in the center and place in the 425˚ oven for 15-20 minutes.
Once the tomatoes are blistered, remove the baking dish from the oven and stir everything together.
Bust the tomatoes to release their juices, and sprinkle in three-quarters of the fresh basil leaves.
Spoon the dip into a serving dish, and drizzle with balsamic glaze.
Serve this dip with crispy crostini.
Using the remaining basil leaves, garnish the full platter with the fresh herb.

      I buy mine from Trader Joe's or the grocery store! Otherwise, take a cup of balsamic vinegar with 1/2 cup of sugar and boil down until syrupy. It takes about 15 minutes on low heat—be sure to watch it so it doesn't boil over or scorch.
