Sunshine Salad Whole30

A sugar free delicious fruit salad made with four ingredients that makes your taste buds, and your waist, happy 🙂

This was the sweet treat that satisfied my sweet cravings during Whole30. For one entire month I went sugar free 😮 along with cutting out a lot of other things. The no sugar was hard for me, I had to give up my beloved ketchup which is full of sugar !! But I did it, and I’m getting ready to do another one! I just felt so much better on it and I lost 16 pounds eating like a pig!! I realize now I never finished week 3 & 4 posts about it. I’ll just do a quick tidbit here: long story short- I ended up feeling so much better again after week 3. Even the book described a possible set back in symptoms on week 3 if you already have autoimmune diseases. You really should try it if you have autoimmune diseases.


Did I mention I lost 16 pounds eating like a starving man?? Okay, so maybe a tiny bit of an exaggeration there, but I did eat A LOT! LittleChefsDad would laugh everytime he saw my plate and tease me saying, “I see you’re eating light today.” LOL.

I call this Sunshine Salad because it made me happy 😁. When you cut the sugar out, this dessert will be your new best friend! But it’s even great if you’re not cutting the sugar out, maybe you’re watching your weight? Cutting calories? Or just eating everything you see? (I won’t judge anyone) Well this is one snack that will satisfy everyone all across the board!

This is my variation of Monkey salad that is very popular. So if this recipe has been done before on the internet, please let me know and I’ll gladly give them credit for it. It’s not much of a recipe, just throw some ingredients into a bowl and mix. But it sure is tasty 🙂


I know I’m running behind this week. My usual Monday & Wednesday postings have been off. Sorry about that. I try to keep to a blogging schedule, but I’ve had so many papers to grade this week it’s been insane! Having four kids in 6 different subjects is challenging to say the least! But I’m thankful I have the opportunity to homeschool them, even when it gets a little crazy here at times. I won’t have time to set up the giveaway till Monday, so please check back next week. I think you all will like it. I’ll give you a hint…. it’s an organizational tool that will help you save time and money. Sounds interesting, huh?? 🙂

Ingredients

  • 1 20 oz. Can pineapple chunks (in 100% pineapple juice), drained
  • 1/4 cup raisins
  • 1/4 cup unsweetened coconut chips I used Simple Truth Organic from Kroger
  • 1/4 cup nuts walnuts, pecans
Instructions

Mix all ingredients together. Add more of each ingredient depending on taste.

    Aren't pineapple and raisins full of sugar? I know they were a no-no on a Keto diet

      Hi Andrea! This isn't a keto recipe. It does fall under the Whole 30 diet guidelines.
