In this video I’ll be showing you this incredible Brazilian Carrot Cake recipe. You might think it is weird to put some sort of chocolate icing on top and that it won’t taste good but that is when you’re wrong and you need to trust me. Brazilians have been eating Carrot Cakes like this since always, in fact we don’t even eat carrot cake without the chocolate icing, or “brigadeiro” on top. But you also might be thinking carrot cake is gross or that vegetables shouldn’t go into a cake but, you’re gonna have to trust me again, this cake is amazing and you can’t even taste the carrot.

This cake recipe is amazing, it is fluffy, light and moist, it actually melts in your mouth! And the chocolate icing on top makes it so much better. It is on the heavier side but with this recipe im showing you it is not that sweet. Using dark chocolate really balances everything out.

This Carrot Cake is one of my favourite kinds of cakes. It is great for a afternoon tea, breakfast, for dessert or even as a birthday cake!

Another thing I love about this Carrot Cake recipe is that it is really easy to make and it doesn’t take long for this delicious cake to be done!

Ingredients
Carrot Cake
  • 3 pcs   Carrots
  • 3 pcs   Eggs
  • 1 cup   Oil
  • ½ cup  Sugar
  • 2 cups  Flour
  • 1 tbsp  Baking Powder
"Brigadeiro" or Chocolate Icing
  • 1 can     Condensed Milk
  • 100g      Dark Chocolate
  • 200g/1cup Whipping Cream
Instructions
Carrot Cake
Pre heat the oven to 180°C/350°F.
Peel and roughly chop the carrots.
In a blender, add the oil, eggs, carrots and sugar.
Blend it until smooth.
Pour the mixture into a bowl and add the flour and baking powder. Using a spatula, very gently mix in the ingredients. Do not over mix, only mix it until it is fully incorporated.
Brush a cake pan with butter and then dust it with flour. Pour the cake batter in it.
Bake the cake for 45mins or until fully cooked. Take it out of the oven and allow it to cool down.
"Brigadeiro" or Chocolate Icing
Start this step when the cake is almost done cooling down.
In a pot, add the condensed milk, dark chocolate and whipping cream.
Put the pot over medium heat and don't stop mixing it with a spatula. Make sure to get the edges so it doesn't burn.
Keep cooking it until the mixture has thickened, it should still be runny. When you run the spatula through the bottom of the pot, you should be able to see the pot for a little bit and the brigadeiro should slowly move inwards again. (Watch Youtube video for visual instructions)
Once you've got the right consistency, set it aside.
To Finish It!
Once the cake has cooled down, put it on a plate.
Make sure the Brigadeiro is still warm or hot for this.
Pour the Brigadeiro on top of the cake and spread it around until the cake is completely covered.
Cut a slice and enjoy!
Tips
  • Don't over cook the Brigadeiro, if it gets too hard you won't be bale to pour on top of the cake.
  • Remember the Brigadeiro will look runnier when its hot but once it cools down it will harden a little.
  • Check if the cake is fully cooked by using a skewer and poking the middle of the cake, if you can see some liquid batter on the skewer, it needs more time in the oven.
  • Once you add the flour and baking powder to the cake, do not over mix it. That will make your cake dense.

    EVAPORATED milk or SWEETENED condensed milk? I'm confused.

      You will need Condensed milk or Sweetened condensed milk, whatever way you prefer to call it. Evaporated milk and Condensed milk are not the same thing or have the same name.
