Nutritious, easy and slightly sweet, these oatmeal breakfast bars are full of fiber and packed with fresh blueberries.


My Oatmeal Breakfast Bars are so easy to whip up and are perfect for meal prep! Make a batch in under 30 minutes to prep a week’s worth of grab and go breakfasts. These bars are made with whole wheat flour, rolled oats and flax seed, so they are packed with fiber to keep you feeling full. They are lightly sweetened with maple syrup and flavored with vanilla extract, cinnamon and juicy blueberries. This may be my favorite breakfast recipe yet!

  • Whole Wheat Flour – you can substitute white flour, but whole grain flour tastes great in this recipe and adds fiber.
  • Rolled Oats – I used Old Fashioned Quaker Oats for this recipe – they’re my favorite. These give the bars bulk and add even more fiber.
  • Flax Seeds – Add a nice crunch and are a good source of omega 3 fatty acids.
  • Baking Powder and Baking Soda – Leavening agents
  • Salt
  • Pure maple syrup – make sure to buy natural real pure maple syrup, not the “fake” kind
  • Eggs – act as a binding agent
  • Banana – Add moisture and nutrition
  • Vanilla and Cinnamon – Add depth to flavor, especially since these bars are lower sugar
  • Olive oil – fat helps the bars stay moist
  • Blueberries – the star! So juicy, delicious and nutritious
Why do my oat bars make a great breakfast?


They are naturally sweetened with a reasonable amount of pure maple syrup, just 1/4 cup in the whole batch. We added vanilla, cinnamon, banana and blueberries to add more natural sweetness to the bars. These oatmeal bars are made with oatmeal and whole grains so they’re packed with fiber. They’re quick, guilt free, nutritious and go great with a cup of coffee!


How to store breakfast bars?


You can store these for up to 4 days in an airtight container. Keeping them in the fridge may help them hold up even better, but you may also store them at room temperature.

Ingredients

  • 1 cup whole wheat flour
  • 1 cup rolled oats
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/4 cup flax seeds
  • 3 eggs
  • 1 banana
  • 1/4 cup almond milk or whole cow's milk
  • 2 TBS olive oil
  • 1/4 cup maple syrup
  • 2 tsp vanilla extract
  • 3/4 cup blueberries
Instructions

Preheat oven to 350 degrees. Line an 8"x8" baking pan with parchment paper and/or grease with olive oil.
Combine dry ingredients: oats, flour, baking powder and baking soda, salt, cinnamon and flax seed in a large bowl.
In a medium bowl, beat eggs with a whisk. Mash banana on the side with a fork and add to the eggs.
Whisk in almond milk, olive oil, maple syrup and vanilla extract.
Make a well in the center of the dry ingredients and add wet ingredients. Stir just until combined.
Fold in blueberries with a spatula.
Bake for 18-20 minutes or until a toothpick inserted into the center of the bars comes out clean.
