Chocolate-Banana Breakfast Cookies
Chocolate-Banana Breakfast Cookies. Yup. I said BREAKFAST cookies! These no-bake delights are packed with nutrients and flavor. Perfect for breakfast or a grab-and-go snack. I have a major sweet tooth so having healthy, sweet snacks readily available is a must to keep me from indulging in white sugar. My recipe calls for old-fashioned oats which means the oats will soften up the longer the cookies sit in the fridge. You can use quick oats as well. These are dairy-free, gluten-free, vegan and can be nut-free if you use sunflower butter. The best part, they are easy enough for your kiddos to make on their own!

- In a large bowl, mash the banana with the back of a fork. Add in the remaining ingredients, mixing well with the fork.
- Scoop out about 1 tablespoon of the dough and roll into balls. Flatten into a cookie shape. Repeat with remaining dough. Store in fridge for up to 5 days.
