Coconut Date Balls

Here in Israel we use dates in many recipes! We grown them

here and have thousands of desserts and savory dishes that we incorporate dates into.

This is one of my favorite recipes.

Its nutritious and easy to make.

Perfect for that snack you crave in the middle

of the day, and you don’t have to feel guilty after eating it.

This recipe is vegan, gluten free, and it’s a non bake recipe!!

Dates, ground almonds, shredded coconut, and cinnamon. Dates work as the natural sweetener in this recipe. If you crave sweet but you want healthy these balls are for you. Chewy and filled with flavor these are definitely for you, and in addition you’ll get a great energy boost from the dates and nuts so what more can you ask for!

I recommend making these balls, freezing them, and keeping them stored in the freezer. They will last at least 2 months in the freezer and this way you’ll always have a snack ready in hand.

Ingredients
For the balls
  • 1/2 cup pitted dates
  • 1/2 cup ground almonds
  • 1/4 cup ground walnuts
  • cinnamon to taste
  • shredded coconut
Instructions
For the balls
Place the almonds and walnuts in a mixer and ground until there is no chunky pieces
Then add in the pitted dates and mix well until you have formed a uniform paste
Season with cinnamon (I like a lot of cinnamon but season to your liking)
Add in about a tablespoon of shredded coconut and blend all together to form a uniform paste
Place in the fridge for about 15 minutes to cool down
To form the balls
Have a bowl of warm water ready, it is easier to form the balls with wet hands, and have a bowl of shredded coconut for the coating of the date balls.
form the balls evenly, coat each ball with shredded coconut and then place on a baking sheet with parchment paper.
place in the freezer and after they steady you can then place them in a box or tin in the freezer for storing.
Tips
  • I recommend using medjool dates,
  • and of course taste the batter to make sure it is to your liking.
  • you can always add more flavor. Some people like to add a tablespoon of cacao for extra flavor. if your a chocolate fan you can even add chocolate chips.
  • Make a big batch of the dough, so that you have many balls and you can always snack on them when you need that energy boost!
