Are you looking for a super tasty and healthy salad? Wait until you try this quick and easy spinach salad recipe.

I love a good recipe where you can just dump and go, don’t you?

This shrimp scampi recipe was my grandmother’s.

And the best part?

You bake it!!!!

Sometimes I just want something light and simple to make for dinner. This spinach salad fits the bill because it has lots of good nutrients like iron and vitamin C.


Plus, I make it with yummy strawberries and fresh mozzarella.


As an aside, I love fresh mozzarella so anytime I can toss it in a recipe, I do!


Spinach Salad with a Twist

The beauty of this salad is you can swap out some of the ingredients for things you prefer.


Plus, you can add an additional protein if you want it to be more substantial.


I’ve made this spinach salad with chicken and shrimp, but you can also try other types of fish, turkey and even slices of meat.

And my dogs come running into the kitchen while I’m making it too.

Because they know they’ll get some strawberries.


And wait until you see the secret ingredient is in the dressing!

I used to just make spinach salad with a basic balsamic vinaigrette.


But once be bought the Vermont cabin and started eating out up there.


Almost everything has real maple syrup in it.


And it is SO good!


It pairs really well with the vinaigrette and strawberries in this recipe.


Even adding just a dash enhances the flavor of this dressing.


So give it a try.


You’ll never go back to a balsamic vinaigrette without it!

Ingredients

  • 1 package spinach
  • 1 package strawberries (sliced in half, tops removed)
  • 1 package cigliene fresh mozzarella, drained and sliced in half
  • 1/4 cup extra virgin olive oil
  • 1/8 cup balsamic vinegar
  • 1/8 cup real maple syrup
  • salt and pepper to taste
  • 1 1lb meat, fish or poultry (optional)
Instructions

Add spinach, strawberries and mozzarella to salad bowl. If adding chicken, fish or meat, add that in too.
In a mixing bowl or salad dressing shaker, mix oil, vinegar, maple syrup with salt and vinegar to taste.
Add to salad.
Mix well and serve.
