Banana Bread Waffles

All the favors of your favorite banana bread in a waffle. Start your day off with a sweet treat and celebrate National Banana BreadDay with these waffles. They are full of banana flavor, tangy from the buttermilk, and kissed with a hint of brown sugar and cinnamon. Delicious.


I like to serve the waffles beside a few slices of Candied Bourbon Bacon.

These fruity, tender waffles are obviously perfect for breakfast and brunch, but they’re also an amazing lunch when used to replace a bun or biscuit for a chicken fillet or sausage patty.


Top the waffles with a scoop of ice cream and whipped cream for a luscious dessert. Another plus is that the waffles freeze very well and can be reheated in your toaster!

Banana bread waffles are incredibly easy to make. With a few handy tips, your waffles will be perfectly tender, golden, and delicious every time.



  • Use ripe, but not black and mushy bananas. I like to use a potato masher to mash them until smooth.
  • Whole buttermilk works best for flavor and moisture in the waffles, but any type of milk, full or low fat, would work.
  • Don’t overmix the batter or your waffles will be tough. If the batter has some small lumps in it, no worries.  
  • Be sure that your waffle iron is hot before pouring in the batter. If you want crispy, browned edges, lightly sprinkle a bit of brown sugar on the edges of the batter before lowering the top of the iron and cook the waffles for a minute longer.
  • Be careful when lifting the waffle out of the iron. The sugar will caramelize and be very hot.
  • You can keep the waffles warm in a 200-degree oven while you make additional waffles. Place a wire cooling rack over a baking sheet and place the hot waffles on the rack and slide them into the warm oven.

HOW TO FREEZE THE WAFFLES

Cool the waffles completely on a wire rack so that the bottom doesn’t get soggy. Wrap each waffle in plastic wrap and place in a freezer-safe container or a ziplock freezer bag. It’s just that easy. 

You can reheat the waffle in a toaster oven or even your standard toaster set on the dark setting.


VARIATIONS OR ADD-INS:



  • Chopped nuts, like walnuts or pecans, would add crunch to the waffles.
  • Raisins, chopped dates, or dried cranberries
  • Pearl sugar - little orbs of sugar within the waffle. Who wouldn’t adore that? Stir in about ½ cup.
  • Chocolate chips - because everything is better with a little chocolate. Stir in about ½ cup.

Ingredients

  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ¾ cup buttermilk
  • 3 tablespoons brown sugar
  • 1 teaspoon vanilla
  • 1 teaspoon banana extract
  • 2 large eggs
  • 3 tablespoons melted butter
  • 2 medium bananas, mashed (should be about ¾ cup)
Instructions

Preheat your waffle iron.
In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
In a medium bowl, whisk together the buttermilk, brown sugar, vanilla and banana extracts, and melted butter.
Stir in the mashed bananas.
Gently fold the wet ingredients into the dry ingredients just until mixed.  Don’t overmix or your waffles will be tough.
Spray the waffle maker with cooking spray.  
Pour ¼ cup of the batter into the iron.
Cook for 4-6 minutes or until golden.
Serve with maple syrup, toasted pecans, sliced bananas, and whipped cream.

    Add fresh blueberries to the batter just before adding to the waffle iron. Beautiful, healthy and delicious- for breakfast, lunch or dinner.
