Good morning friends how is your week starting off? Things here are busy here this week, my to-do list feels as long as the receipts you get at CVS. The highlight of the week is going to be getting my highlights, and my hair cut. I know that many are embracing their gray hair but I am not there yet so until then I am going to enjoy my trips to the salon, masked of course.
I’ve also been making my Easter plans, Easter is April 4th, just a little over a month away and although I would love to say that I will be spending it with family that is not going to happen again this year. So I am baking and making my Easter baskets, bread, treats and sweets to send so that they will have them. This year I am also going to be trying a few new things using a recipe of my grandmother, I want to make something for my mom to remind her or her mother and happier times.
For Valentine’s Day I made the easiest DIY Dollar Tree Candy Favors and the recipients liked them so much I am making them again for Easter. This time it is even easier because all you need is an old fashioned sugar cone, (which I think is perfect because it looks like a basket), candy, lots of candy and a triangle shaped cellophane bag, tie it up with a piece of festive Easter ribbon or twine and that’s to, a cute Easter favor to gift or to keep for yourself. This easy favor can be made for every holiday and can be used as a place card, wedding favor, treats for school and any other occasion you can think of.
This “craft” is perfect to make with your children or your grandchildren, not only because it is easy and fun but what kid doesn’t like candy? Just watch so they don’t eat too much or you may be in trouble with their parents. I will admit that I did taste test every kind of candy that I had, some I liked and some I didn’t.
On a side note, do you have a favorite Easter candy? I LOVE, LOVE, LOVE Reese’s Peanutbutter Eggs, one year many, many years ago I ate a case of them in about 2 weeks. This was way back when they only made the eggs and they were a treat every Easter. After that gluttonous Easter I didn’t eat them for about 5 years. I also love Whopper Eggs, although I do not think they make them anymore, I am not sure why because the ones with the candy coating are not that tasty. Aside from that red jelly beans and that is it. Ok, on to Easter favors.
DIY Easter Treats and Candy Cones
Sugar ice cream cones
Candy, jelly beans, M&M’s, Hershey’s Kisses and anything else you like
Ribbon or twine
To assemble the favor, simply take an ice cream cone, place it in the cellophane bag and fill it up with your sweet treats and candy. Tie it with ribbon or twine, add a gift tag.
Tip: If you don’t want to use the sugar cones you can easily use craft paper to make a cone shape and fill that with candy. All of the supplies can be found at The Dollar Tree(candy, cones, cellophane bags), Michaels(craft paper, candy, twine, ribbon), Target or on Amazon.

These pizza rolls are an oldie but a goodie!Now I can’t take credit for these- this original recipe was written by Michelle Ayala, an amazing baker who was in my church congregation growing up. She taught the youth to make these, and I’ve been making them ever since. I’ve added a few of my own tweaks since then, but these rolls will always have some nostalgia for me. This is one of the first meals I made for my husband when we were married. And since then I can think of the specific places and people I’ve made this for since joining the military. They’re definitely a family favorite! The dough is mixed with italian seasoning and garlic to give it some extra flavor, and spread lightly with pasta sauce, then topped with Cheese and Pepperoni. This is a very easy recipe and very versatile, since you can add any veggies you like. I used mushrooms, onions, carrots, celery I had on hand and added a handful of baby spinach at the end. I used fresh pesto tortellini pasta for this recipe, but you may used cheese tortellini as well. I like to first sautee the onions, sausage and mushroom. Then add the carrots, celery and dry herbs before I add the veggie stock and cooked beans, then let it simmer for about 15 minutes. Then you may add the tortellini, pesto sauce and spinach. It is now ready to be served, add some freshly grated Pecorino Romano on top and slice of nice warm rustic bread.

There’s a korean cafe near my house and I’m obsessed with their fruit tarts. Instead of pastry cream, they’re filled with a cheesecake mixture and topped with glistening fruits. Yum! I have some leftover mascarpone and ricotta cheese at home and thought I’d try to make some tarts that inspired by the ones in the cafe. Instead of butter, I have opted to use a light olive oil spread to try and decrease the amount of saturated fats. The problem is it is softer than butter even when cold so it makes the dough harder to handle because it’s stickier. I find chilling it for a few hours beforehand and lightly flouring your hands and counter helps. Be careful not to add too much flour though or your pastry will be tough. To avoid handling it too much, I initially used a potato masher and a spoon to mix the spread with the flour. You can use a pastry cutter or better yet, a food processor if you have them instead (I don’t own either)After transferring the dough into the tartlet tins, I find it helpful to freeze the dough in the tin for half an hour before baking. Depends on how shallow your tins are, you may want to use baking paper and pie weights when blind baking it. My tins are quite shallow so I didn’t find that I need it. Growing up I spent a lot of time visiting my grandmother. When I arrived to her home, she’d have a couple of surprises for me. One surprise was a booklet with paper cut out dolls and clothes and the other surprise were frosted animal crackers/cookies with sprinkles. I loved them and my days spent with her. She’s no longer here but our memories together remain vivid.Now that I’m a grandmother to 4 sweet kids, I want them to have memories of times spent with me and the special treats I make for them. They love cookies, I frequently make mini chocolate chip cookies which they love. However, they’ve never tasted animal cookies because I know now as an adult that they’re full of a lot of bad ingredients, so I decided to make them instead. They not only turned out delicious, they were simple to make and super cute and talk about nostalgic treats 🥰 that’s what these are to me. They bring back lots of great memories.I chose to not use food coloring and instead I used beet powder. No, it didn’t give the cookies a beet flavor either but it sure did give it a lovely color. Super delicious frosting that I’m very proud to introduce to you. The most creamy, light and easy to make frosting you can ever make. This is made from cream cheese and whipped cream, but wait it’s not only that... If you love frosting and you thing its to heavy and sweet and maybe tasteless, try this recipe I’m sure you’ll change your mind. I make my bakery my self and all the birthday cakes and cupcakes but i had the eternal problem with the frosting. I tried the american frosting which is powdered sugar and butter and that was too sweet foe me. Then I tried the Italian and French buttercream, OMG, its such pain to make them, very complicated with a long process and the result is not guaranteed. Then, i thought that the cream cheese frosting will works. It was delicious but it didn’t hold the shape as I wanted manly because i don’t like to put tone of sugar in it. I tried just the whipped cream but my kids didn’t liked it. I mixed the cream cheese and the whipped cream again not holding the shape when i pipe it. The last chance was to control the dosage. Less cream cheese and more whipped cream with some powdered sugar and Bingo, it was the right formula.
