These super seed energy bites are such a great treat to have on hand. They are perfect as a pre-workout snack, mid afternoon pick-me up or even a dessert!

These are loaded with good for you ingredients like hemp seeds (amazing source of plant based omega-3s and protein), chia seeds (great protein source), flax meal (hiiiii fiber icon ), peanut butter (healthy fats and ore protein!) and last but not least, an additional scoop of protein powder for some extra protein. I opted for raisins for that sweet bite but they can easily be swapped out for your favorite dried fruit or chocolate chips!

I have loved having these in my fridge for a pre-workout snack or when I feel like I need something to finish off my lunch. They come together so quickly and have also been a life saver for those work from home days when back to back zoom meetings require you to have something quick and on hand.

I hope you enjoy these! For more recipes check out my recipes on my blog: www.sweetescapekitchen.com

The dough may seem a little dry but keep working it until it comes together. I highly recommend only using pure, drippy peanut butter for this recipe.

I got 12 energy bites. They were each around 18 grams and are large enough to have one or two and be satisfied. You can definitely make them smaller and get a higher yield!

Ingredients

  • ¼ cup hemp hearts
  • 1 tbsp chia seeds
  • 2 tbsp flax seed meal
  • ½ cup drippy peanut butter
  • ¼ cup vanilla protein powder
  • 1 tsp vanilla
  • 2 tsp cinnamon
  • ¼ cup raisins
  • ¼ cup rolled oats
  • Pinch of salt
  • Optional: 1 tbsp maple syrup/honey if you want them sweeter/protein is unsweetened
Instructions

Mix your hemp hearts, chia, flax, cinnamon, oats and protein powder together in a bowl.
Add in your wet ingredients : peanut butter and vanilla
Mix together using a nonstick silicone spatula until well combined. You can also mix it using a clean hand OR a food processor. If you use a food processor use the pulse setting until you see the mixture coming together.
Fold in raisins (again, if using a food processor just a couple of pulses so the raisins remain whole).
Roll into small balls. I made mine around 18 grams and had 12 energy bites.
Bites should be stored in the fridge and should be had within 6 days for freshness. I haven’t tried them frozen but I have a feeling they would be delish that way as well!
