Huevos Rancheros (Fried Tortilla topped with Sunny-side up egg)

This is by far one of my favorite Mexican breakfasts. My parents live across from this café in Mexico City that makes the most delicious Huevos rancheros ever – I go every time I visit. I wanted to recreate them and use the same techniques they used. The most important thing to do when making Huevos Rancheros is to fry the tortillas yourself.


Some people buy tostadas to make these, but frying the tortillas really give it the flavor that the Huevos Rancheros need. You can modify the garnishes to your liking: I used my mom’s homemade Salsa Verde, but you can use your favorite store bought hot sauce if you want.

Start by frying the tortillas. In a large deep saucepan, add about ½ inch deep oil and wait for it to shimmer. Add the tortilla and fry for 2-3 minutes on each side.


Assemble the huevos rancheros. Spread the beans on four fried tortillas. Top each fried tortilla with an egg. Add the salsa on top and garnish with avocado, cilantro, sour cream and cheese to your liking.

Ingredients

  • Vegetable or Canola Oil, for frying
  • 4 corn tortillas
  • 4 Sunnyside up eggs
  • 1 8 oz can refried beans
  • 1/4 cup Homemade Salsa Verde, or store bought Salsa Verde
Garnish
  • 1 avocado, diced
  • 2 tablespoons of chopped cilantro
  • Crema Mexicana or sour cream, as desired
  • ¼ cup crumbled queso fresco

Tips
  • You can substitute the salsa verde with your favorite hot sauce
  • You can use shredded mozzarella or pepperjack cheese, although not traditional, still delicious.
  • Feel free to make the eggs over easy or medium if you prefer them more cooked.
  • Instead of frying the tortillas, you can bake them for a healthy alternative. Bake at 350 F for 8-12 minutes. Flip once halfway.
