Chia Pudding and Sweet Potatoes Mix

Among the heftier of chia puddings, this sweet potato mix and chia pudding combo is a fulfilling dessert. It takes advantage of the natural sweetness of the potato, which has been loosened with a dash of milk to create a rich, soft partner for the universally complementary chia pudding.


Coming in several shades and flavours, the sweet potato I used was of the Japanese sort, I love it for it's unique flavour that is sometimes described as nutty or like roasted chestnuts, and the texture is starchier as opposed to fluffy.


You could also use ube, also known as purple yam, instead of sweet potato.

Basic chia pudding recipe

Mix all ingredients and let rest in the fridge in an airtight container for at least 2 hours.

Sweet potatoes mix

Using a potato ricer, mash the sweet potatoes and divide into two portions.
In a bowl, mix one portion of the mashed sweet potatoes with milk and honey. You can use a spoon or blender to mix.
Start the layer by adding the mashed sweet potatoes at the bottom of the glass, then add chia pudding, a mix of sweet potato and milk, and finally top with more mashed sweet potatoes.

Tips

  • If you don't have a potato ricer, you can use a fork to mash the sweet potatoes.
  • If you don't have time to refrigerate the chia pudding for two hours you can heat the milk first, then add the chia seeds and honey, mix it and let stay for 15-20 minutes.
