If you are a fan of batch cooking or have a big crowd to feed this Mediterranean Quinoa salad is perfect! It makes a great side dish for dinner or an equally delicious lunch option. I make this dish frequently in the summer because it’s the perfect go-to to grab from the fridge when you don’t feel like cooking. I love using quinoa as an alternative to pasta as it is much lighter and healthier. The dressing is made up of just a few simple ingredients, but don’t let that fool you, this quinoa salad is anything but bland! There are so many different flavors and textures going on but they all work perfectly together in this incredibly delicious salad.

Begin by cooking one cup of quinoa according to the package directions. I like to cook mine using chicken broth for extra flavor. Once the quinoa had cooled add it to a large bowl.

Add the chopped veggies, feta cheese, and chickpeas to the same bowl.

Whisk up the dressing and pour over the salad. Give it all a good stir and garnish with a few pitted Kalamata olives.

This is seriously one of the easiest dishes to make, but it definitely does not lack on flavor.

On it’s own, or as a side this salad is so versatile and pairs well with so many mains.

Ingredients
Dressing
  • 1/3 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 tsp fresh minced garlic
  • 2 tsp dried oregano
  • Salt and pepper to taste
Salad
  • 1 cup dry quinoa (pre cook)
  • 1 can rinsed and drained chickpeas
  • 1-2 diced tomatoes
  • 1/2 diced cucumber
  • 1/2 red onion chopped
  • 1 cup crumbled feta cheese
  • Kalamata olives
Instructions
Mediterranean Quinoa Salad
Cook one cup quinoa. Once cooked this will expand to a larger amount so don’t worry if it’s doesn’t look like a lot to begin with.
Wash and chop all veggies.
Add veggies, quinoa, feta, and chickpeas to a large bowl.
Whisk together the dressing ingredients and pour over the salad.
Give everything a good stir to evenly incorporate the ingredients.
Garnish with some Kalamata olives and enjoy!
