How to make the perfect meatball


½ pound ground veal

½ pound ground pork

1 pound ground beef

1 ¼ seasoned bread crumbs

½ cup of grated parm

2 tablespoons chopped flat leaf parsley

2 tablespoons chopped basil

2 teaspoons salt

½ teaspoon pepper

1 egg

3 tablespoons olive oil


1 Small Onion


  • Preheat oven to 400

  • Cut Garlic in half and wrap in foil, put in the oven

  • Chop your parsley and basil

  • Dice your onion (as small as you can, think about what you would want to bite into)

  • Take out your garlic when it is mushy and smells very fragrant (can take from 15-45)

  • Mix all ingredients together in a bowl until fully combined

  • Line a Sheet Pan with Foil

  • Take an ice cream scoop and scoop your meatballs (they don’t have to be far apart from one another on the sheet pan)

  • MINDFULNESS ACTIVITY: count each time you scoop a meatball, every fifth scoop smile and say something you are proud of

  • Put these in the oven for 30-35 minutes or until the middle looks like a well done hamburger

  • Broil for 1-3 Minutes (keep a close close eye because this goes quickly) look for a golden brown top
