Baked Apple Pancake ~ Cast Iron Baking

When it’s a special day for someone you love ~ birthdays, Mother’s Day, Father’s Day, your anniversary ~ whatever it may be it’s always a great way to start the day with breakfast in bed. This recipe is perfect for just that purpose or any day you’re looking for an easy and delicious breakfast.

I remember when my oldest son was only 11, I was a single Mom and afraid….not sure of so many things, missing my own Mom who had passed away 9 years earlier, and my oldest woke me up (along with his then 2-year-old brother) to breakfast in bed. 


Eggs (slightly burnt), toast (sorta burnt), and coffee were on a cutting board (the tray). They made a card for me and came into my room with huge smiles across their faces. 


That morning will always be one of my favorite memories as a Mom and to this day makes me smile from ear-to-ear! So, whether you surprise Mom with this recipe or something else, you’ll make her happy.

So let’s get moving with the recipe…

One more thing to make this breakfast a success ~ don’t forget the coffee! If you know me at all you know I love good coffee. When I used to drive my oldest son to his first job some mornings I was up at 5:30 a.m. to get him there by 6 o’clock. Thankfully, across the street from where he worked there was a Dunkin’ Donuts.

Ingredients

  • 1/4 cup butter
  • 4 to 5 apples peeled cored and thinly sliced
  • 1/2 cup sugar
  • 1/2 teaspoon cinnamon
  • 6 eggs beaten
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1/2 teaspoon salt
  • maple syrup ~ optional
Instructions

Preheat oven to 375 degrees. In a 10 1/2 inch cast-iron skillet melt the butter.
Add apple slices, sugar and cinnamon and saute until apples begin to soften.
In a mixing bowl, blend together eggs, flour, milk and salt.
Pour the above mixture over apples in skillet.
Bake at 375 degrees for 30 minutes.
Serve with maple syrup if desired.
