Steam the cauliflower.
Add to a food processor and process until purée consistency.
Transfer to a cheesecloth or thin tea towel and press out as much water as possible.
Transfer cauliflower purée to a bowl and add the paprika, garlic, salt, pepper, egg, Romano grated cheese, Mexican shredded cheese and mix well. Let it cool to the touch.
Spray the nonstick spray on the air fryer rack.
Use a teaspoon and scoop out the cauliflower mixture and roll in a ball to combine, they roll into a tube and press the top and bottom of the tube shape. This will form your tot. Continue until you make 24 or more cauliflower tots and add to the greased air fryer rack.

- Cut the cauliflower head into the florets. Wash and add them to a steamer. Cook for 10-15 minutes until the cauliflower florets are tender when you poke it with a fork.

I am going to do it again soon! Taking out the excess water after using the food processor really does help keep the tot shape. I hope you like them.
