Loaded Baked Potato Casserole

Baked potato casserole is a tasty weeknight meal that the whole family will love. Cooked sausage is topped with mashed potatoes, crispy bacon, cheddar cheese and green onion. Make this casserole to take to your next pot luck or dinner party. All your favorite baked potato ingredients loaded into a delicious casserole.

Ingredients for baked potato casserole

  • 5 Medium potatoes
  • 1lb of ground sausage
  • 2 cups of shredded cheese
  • 1 cup of sour cream
  • ½ cup of milk
  • 12 slices of bacon
  • Green onion
  • 2 tbsp butter


Peel and boil the potatoes until they are cooked. Mash them and add ½ cup of milk and 1 cup of sour cream.

While the potatoes are boiling cook the sausage meat in a pan on the stove over medium- high heat. Drain the fat and set aside. Cook the bacon until brown and crispy in a separate pan. Drain the grease and chop the bacon into small pieces.


Preheat the oven to 350 degrees. In a large glass pan spread the sausage meat on the bottom of the pan. Then spread the potatoes over top. Sprinkle with cheese, bacon pieces and chopped green onion. Bake for 10 minutes and let cool for 10 minutes before serving.

Serve with extra sour cream and cheese. Serves 8.

Clean and peel potatoes. Slice in chunks and boil until soft.
Drain potatoes.
Add milk, sour cream and butter. Mash potatoes with a potato masher.

While the potatoes are cooking cook the sausage in a frying pan until brown. Drain grease and set aside.
Cook the bacon until crisp. Drain extra grease and chop into small pieces.
Place sausage in a 10x10 glass oven safe dish.
Add mashed potatoes on top of the sausage.
Put the chopped bacon, cheese and onion on top of the mashed potatoes.
Bake in the oven for 10 minutes. Let cool for 10 minutes and serve.

Tips

  • Serve with extra sour cream and butter.
