Caramelized Onion Dip

Are you having a party without potato chips and onion dip??? Yeah, then I'm not coming! I know there are many delicious store-bought varieties of this kind of dip, but you really don't know what you've been missing out on until you make onion dip from scratch. Use a combo of ingredients for your dip base, whether you prefer sour cream, mayo, cream cheese and/or greek yogurt. They key here is slowly caramelizing diced onions in butter and olive oil, adding a splash of wine, and letting them cook down until golden and delicious. Mix the cooled onions into your dip base, add a few seasonings, and serve with plenty of hardy chips like ridged or kettle-style. You'll never want store-bought dip again!

Melt butter and olive oil over medium heat in a large pan.
Dice onions and cook about 30-40 min over med-low heat with brown sugar and sprinkle of salt.
If they begin to brown to fast or stick to bottom of pan, turn heat down slightly and add a splash of white wine, sherry wine, or water if you prefer. You can't really overcook these! Just cook low and slow about an hour total!

For the Dip

Combine sour cream, mayo, cream cheese, and seasonings together in a bowl. Make sure cream cheese is room temp or it will be lumpy in the dip. You need 1.5 cups of "dip base" - you can use any combo of sour cream, mayo, cream cheese or greek yogurt.
Gently stir in cooled onions to combine.
Place in serving bowl and top with scallions. Serve with chips!

Tips

  • Refrigerate dip at least an hour before serving to allow the flavors to meld together.

    I LOVE Vidalia onions. Well, ALL onions really. Is it OK to use one kind of onion in the dip or is it much more tasty if you use two different types?

      I would say use what you have on hand! I do like the variety but let's be honest... any onions cooked down for that long are always going to be delicious, no matter what variety!
