Banana Blueberry Buttermilk Waffle

Ever have a craving that just won't go away? I did this week and I just had to satisfy it. I had been craving Waffles for the last few days. Not just a waffle but one with Banana and Blueberry in the mix.

My usual breakfast consist of a power bar during the week. The School District I work for takes this whole week off, they call it President's Week. With my extra time, I decided to cave into the craving.

Plain Buttermilk Waffle

I cut down this recipe and it made only 2 medium size waffles. Just enough for my husband and I. First, I made one Waffle without Banana's and Blueberries for my husband.

Then I added bananas and blueberries into the rest of the batter. I poured the batter onto the Waffle maker and crossed my fingers. I had never done this before and wasn't sure it would come out.


Lucky for me it did! Craving crushed!!

Ingredients

  • 3/4 cup flour
  • 1/4 cup cornstarch
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 tablespoon sugar
  • 1/2 teaspoon kosher salt
  • 1 cup buttermilk
  • 1/3 cup vegetable
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Butter, syrup and/or berries, for serving
Instructions

Whisk the flour, cornstarch, sugar, baking powder, baking soda and salt in a medium bowl. In another bowl or large measuring jug, whisk the milk, vegetable oil, egg and vanilla together until blended. Pour the milk mixture into the flour mixture and whisk until just mixed. Set batter aside for 10 to 15 minutes so the baking powder has time to activate.
Heat the oven to 200° F and heat the waffle iron. Pour the batter onto the heated waffle iron and cook until the waffle is crisp and golden brown.
Tips
  • I added 1/2 banana and 1/2 cup blueberries right into the batter
