Two words...Pimento Cheese!!!

Pimento cheese could be its own food group in the South! It’s basically just a bunch of cheese, mixed with mayonnaise and a bit of pimentos thrown in, and it is delicious. However, I try to limit my portions of it and only have it on special occasions and family get togethers as it is high in calories and saturated fat.

I had a lot of it leftover after my daughter's birthday party and was trying to figure out what to do with it. That’s when I realized I had some chicken breast in the fridge and thought what could be more delicious than pimento cheese stuffed chicken?!

This pimento cheese stuffed chicken breast recipe contains only four ingredients, is easy to throw together and is a recipe your whole family will love.

I recommend serving 1/2 of a chicken breast with vegetables for portion control!

Preheat oven to 375 degrees.
Cut a slit down the center of each chicken breast and stuff each with 1/4 cup pimento cheese.
Brush both sides of chicken breast with Greek yogurt.
Roll each chicken breast in bread crumbs and place in prepared baking dish.
Bake for 40 minutes or until chicken is cooked through.
