LET'S GET STARTED: Chop or dice your onion and peppers. I use the slap chop because, why the heck not!?Question: Do you cry while chopping onions? I’m the designated chopper in my house because they almost NEVER make me cry. I think my secret is wearing contacts. Is this the case for anyone else, or just me?

ADD A LITTLE… SPICE: Spices can be added to your preferences. I prefer two tablespoons of this “six chili powder” and one tablespoon of cumin.This six chili spice is from my local Kroger grocery store and provides the perfect amount of heat without seeming “spicy.” My toddler eats this chili and isn’t bothered by the heat. Though my father-in-law would ask if I was trying to kill him with this amount of spice. It really is dependent on your own palate.

MIX IT ALL UP: Now is the time to address the elephant in the room… BEANS. If you’re one of the (wrong) individuals who think it’s not chili without beans, now is the time to add them in.This chili is best stewed all day in order to let all the flavors really mingle together, however, in a pinch it can be cooked entirely on the stove. To do so, simply bring all ingredients to a boil, then reduce heat and simmer for 20-30 minutes.For a sweeter result, pour in a can of Campbell’s tomato soup to the mix.

TOP IT OFF: As you can see, I like to top my with a hefty dollop of sour cream, cheddar cheese, jalapeno slices, and a side of cornbread. My insider tip though, add just a splash of the jalapeno juice to your bowl for a little extra kick in every bite. Additional topping options could include crackers, (such as saltines, oyster, ritz, etc.), guacamle, or anything else you dream up.

Ingredients

  • 2 LBS GROUND BEEF (or any ground meat of preference)
  • 2 YELLOW ONIONS, diced
  • 2 GREEN BELL PEPPERS, diced
  • 2 (14.5oz) CANS DICED TOMATOES (use stewed or crushed if you prefer larger chunks of tomatoes)
  • 2 (14.5oz) CANS BEEF BROTH
  • 2 TBSP CHILI POWDER (use more or less to desired taste)
  • 1 TBSP CUMIN
  • SALT AND PEPPER, to taste
Instructions

Start by dicing the onions and peppers.
In a large pan over medium-high heat, cook meat and vegetables. I use 93% lean beef and skip draining any grease with with no issues.
Be sure not to only cook the meat until it is juuuuust done as it will continue cooking within the soup mixture.
Pour the meat and vegetable mixture into a crockpot along with all of the other remaining ingredients.
Cook on low 6-8 hours, or 2-3 on high.
Serve with desired toppings.
