Italian Tortellini Soup

Italian Tortellini Soup is flavorful and delicious. This colorful soup is a wonderful addition to any Christmas gathering! It comes together quickly and is a crowd pleaser!

Are you a traditional Christmas dinner type family? We really aren’t, after the turkey dinner at Thanksgiving, we aren’t really craving that type of meal. At Christmas, we like to break from tradition and have a kind of soup potluck. Everyone brings their favorite soup or chili. I have told you before that soup is my love language, I think I show love to others by making soup. This new soup tradition delights me immensely!


Large Batch Tortellini Soup

This recipe is exactly how I make it, which is always a huge amount. It easily serves 20. If you don’t want a large amount of soup, just halve the recipe. You really can’t mess this up. If you are halving the recipe, go ahead and use two large cans of crushed tomatoes. Or you could use one large can and one small one. Really it will be good either way. That is what I love about soup!


I think this recipe is inspired by a Taste of Home recipe for Christmas Tortellini soup. I started making this soup at least 15 years ago. This one varies quite a bit from that original recipe, but I am pretty sure that is where the inspiration came from.


Ingredients for Christmas Tortellini Soup


  • 2 lbs Italian Sausage
  • 2 yellow onions
  • 2 heads of garlic minced
  • 3 large 28 oz cans of crushed tomatoes
  • 8 cups of chicken broth
  • 1 large package of frozen spinach, fresh is fine too
  • 2 tsp italian seasoning
  • 1 tsp garlic salt
  • shredded parmesan for topping
I used to be able to find the tri-colored tortellini in my local stores. However, I could not find it this time. The colored torts make it extra pretty, but oh well! I use one package of cheese and one package of pork and beef.

Instructions

Brown the Italian sausage, leaving the grease in the pan, add in the onion and garlic. Cook until the onions are translucent. Drain any extra grease.

Next, you just start dumping the remaining ingredients into the pot. Add in the tomatoes, the spinach, the chicken broth, and the seasonings. Let that simmer for about ten minutes. Then add in the tortellini and cook for another five minutes. Top with parmesan if desired and serve!

**A note on the italian sausage. We raise our own pigs for pork. This last time we butchered was in this wonderful year 2020…we could not get into our usual butcher. The place that had an opening does a great job, but we are not crazy about the way they season their sausage. So, we got all of sausage ground without seasoning and decided to try our hand at seasoning it ourselves.


I don’t think we will ever switch doing it this way! We found some seasoning blends that we really like. We just add it in before cooking. Then we can do either breakfast sausage or Italian sausage as we need it. Here is the Italian seasoning that we use…it is really good! This is the breakfast one.

Ingredients

  • 2 lbs Italian Sausage
  • 3 large Cans Crushed Tomaotes
  • 8 Cups Chicken Broth
  • 2 chopped onions
  • 1 Pkg frozen spinach
  • 2 19 0z Pkg Frozen Tortellini Cheese or Meat
  • 2 Heads Minced Garlic
  • 2 tsp Italian Seasoning
  • 1 tsp garlic salt
  • Grated Parmesan For garnish
Instructions

In a large pot brown the two pounds of Italian sausage over medium heat, retain the grease and add the onion and garlic. Cook until the onions are translucent. Drain any excess grease. Next add the crushed tomatoes, the chicken broth, the frozen spinach and the Italian seasoning, plus the garlic salt. Let the soup simmer for about ten minutes, next, add in the tortellini and let it cook for 5-10 more minutes. Longer is good too, but if you are in a rush that time will cook the tortellini. Serve and top with grated parmesan. Enjoy!
