I am a flavor person. Simple is great, I get the appeal but I just LOVE playing around with flavors and taking a recipe that's otherwise ordinary up a few notches to extraordinary. Like this low FODMAP friendly dessert, Dairy Free Matcha Honey Lavender ice cream for example. Matcha ice cream = ordinary. Add in that honey + lavender and WOW does this kick up about ten notches.


I got the inspiration to make this dairy free matcha honey lavender ice cream flavor during a barter of sorts with my brother. He was getting rid of a gorgeous rug that I just had to have, and being that he is a terrific brother, he offered to trade with me in exchange for 4 pints of ice cream. Moments like this are when this whole baking/sweet making piece of the recipe development puzzle come together nicely for me. Who doesn't want to barter for some homemade ice cream?! Anyway, we were discussing flavors and I asked him if he'd like a matcha ice cream. He's a little matcha obsessed so I knew he'd agree. As we chatted he asked if I could add honey and then pretty much at the same time we both said "Matcha Honey Lavender!!" and the flavor was thus born!


I tested this dairy free matcha honey lavender ice cream recipe twice, once being more matcha forward and another time slightly more flavor balanced. It was honestly delicious either way and is up to you which direction you choose depending on your love for matcha. I enjoy matcha but I am not as matcha obsessed as my little bro, so for me I preferred the version that was slightly more balanced, therefore that's how I have chosen to share the recipe. If you're a matcha crazed individual, then by all means add more!


Before we jump to into this dairy free ice cream recipe, I want to address matcha and FODMAPs. When I first began the low FODMAP protocol I thought it was off limits. The more digging I did, the more conflicting information I found (thanks internet.) At risk of sounding like a broken record, you know I'll always first tell you to listen to your own body. If you're in the elimination phase, try this with only 1 tbsp of matcha. You'll be more than safe FODMAP-wise. If you've moved on to modified low FODMAP like I now have, you should be perfectly fine with the suggested serving, however again you know your body better than I do (and I'm assuming if you don't tolerate matcha, you've likely not even made it this far!) Monash University has tested matcha for FODMAPs and approved 1 cup of matcha/green tea to be low FODMAP acceptable. Harder to translate into ice cream, but I'm willing to bet your tummy will be very happy with this ice cream!

Ingredients

  • 1 can full fat coconut milk
  • 1 can coconut cream
  • 1 tbsp gelatin
  • pinch of sea salt
  • 1 tsp vanilla extract or vanilla bean paste
  • 1-2 tbsp matcha
  • 3 tbsp honey
  • 3 tbsp monk fruit
  • 2 drops culinary lavender extract
Instructions

Over low heat, pour canned coconut milk + cream into a small pot, whisking until smooth. Allow to heat but not fully boil.
While still heating, stir in vanilla extract, pinch of salt, monk fruit, honey and matcha whisking again to combine.
Next, mix in gelatin and whisk vigorously to avoid clumping.
Pour ice cream base into heat proof container, cover and allow to set in the fridge about 45 mins.
Once the coconut mixture is cool, add to frozen bowl of ice cream maker , add in lavender extract + churn according to machine instructions.
Store in these pint containers. Don't forget to allow to defrost 15-30 minutes at room temp with the lid off for optimal scoop-ability!

    How could you make this recipe vegan, without the gelatin & honey?

    • Hi Robin, great question! You can substitute agar agar for the gelatin and agave for the honey to keep the sweetness, which this definitely does need due to the bold flavor of the matcha. I hope you enjoy it!
