Coconut Chocolate Overnight Oats

I haven’t had overnight oats in years and wow I forgot how amazing they are! This is definitely my new go-to breakfast as most of the preparation is done the night before, making those rushed mornings that much easier. I’ve tried so many combinations with the oats — from chocolate to mango to berries and they’re all great! I love playing around with these flavours but this chocolate and coconut combo really amps up the oats. Be sure to have a can of coconut milk in the fridge for these oats as we will be needing the thick part of the coconut milk as it solidifies while it refrigerates.

Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup milk (I used oat milk)
  • 1 tbsp ground flax
  • 1 tsp maple syrup
  • 2 tbsp coconut milk **Store canned coconut milk in the fridge overnight, the next morning only scoop the thick portion that is creamy for the recipe**
  • 1 tbsp cocoa powder
  • 1 additional tsp maple syrup (keep separate)
  • Toppings: sliced bananas, nuts
Instructions

Mix oats, milk, ground flax and 1 teaspoon maple syrup in a container. Store in fridge overnight.
The next morning, blend or mix coconut milk, cocoa powder and maple syrup together.
Top off oats with coconut & chocolate mixture as seen in the photo OR mix well together. Top off with bananas, almonds or any other toppings of your choice!
