A one-bowl recipe for a caramelized, crispy-edged, oven-baked skillet pancake topped with brown butter glazed pear slices

What makes this brown butter pear skillet pancake so good?

  1. The best part about this skillet pancake is the crispy, caramelized edges! Because the pancake batter is poured into a brown-butter brown sugar mixture and then baked at high heat, it crisps up the edges and creates a super fragrant buttery pancake.
  2. This recipe is perfect for a filling breakfast or brunch for 2-3 people. Hooray for small-batch recipes!. This recipe is for an 8-inch cast-iron skillet or any 8-inch oven-safe pan.
  3. The pancake batter can easily be made in just one bowl.
  4. It looks sooo good with the fancy pear assembly on top!

Can I use other fruit in this brown butter pear skillet pancake?

Yes! You can substitute the pears with similar fruit such as apples, certain stone fruits: peaches, plum, apricots, and nectarines. With these fruits, the exact same optional spices work too!


Note for apples: Apples are a harder fruit than pears. Cut them into 1/4 inch slices and brown them with the butter for 6-8 minutes, making sure the apples are somewhat softened. If not, leave them in for a minute or two longer, but not any more, or else the butter will burn.


Note for the listed stone fruits: Peaches, plum, apricots, and nectarines (especially those that are well-ripened) will be more fragile than pears. Cut them into thicker slices, around 1/2 inch, and then be careful as you move and assemble them.


What if I don’t want to bother with the pear assembly?

Here are instructions without the fancy pear assembly on top, but with diced pears in the batter instead: Dice the pears into cubes (around 1/2 inch pieces). Brown them with the butter and sugar as written in step 2. Take out the baked pears, keeping the butter-sugar mixture in the pan, and still spreading it around the sides. Directly mix the pears into the pancake batter. Pour the batter into the pan and follow the baking instructions in step 5.


Alternatively, you can brown the butter and pears together as written in step 2, and then randomly spread the pears on top of the pancake batter. Follow the baking instructions in step 5.

Ingredients
BROWN BUTTER PEARS:
  • 4 tablespoons Unsalted Butter, melted
  • 1 tablespoon Light Brown Sugar
  • 1 pear, cut to 1/4 inch slices
PANCAKE:
  • 2 Large Eggs
  • 1/2 cup Milk of choice
  • 1/2 cup Whole wheat Flour or All-Purpose Flour
  • 1 tablespoon Granulated Sugar
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon kosher salt
  • Optional Toppings: Whipped cream, berries, sliced almonds, lemon slices, cinnamon sticks

Instructions

Preparations: Cut the pears into wedges and then into approximately 1/4 inch slices. Melt the butter and measure all out other ingredients. Preheat the oven to 450F/230C.
Brown butter pears: Place the sliced pears into an 8-inch cast-iron skillet or oven-safe 8-inch pan. Sprinkle the brown sugar evenly over the pears, then drizzle the melted butter on top. Place in the oven for 6-8 minutes, or until the butter is browned. Meanwhile, make the batter.
Pancake: In a medium mixing bowl, combine the flour, sugar, baking powder, salt, and optional spices: cinnamon, ginger, nutmeg, and cloves. Add in the eggs, milk, and vanilla extract. Whisk until the batter is just incorporated. Do not overmix, some streaks of flour are fine.
When the brown butter pears are done, take the pears out because they will be reassembled on top later. Smooth the melted butter over the sides of the pan to prevent the pancake from sticking and to create the crispy caramelized edges.
Pour the batter into the pan and top with the brown butter pears. Carefully place each pear slice over the last, creating a fan effect. Place the skillet in the center of the oven and bake for 20-25 minutes, the pancake should be sizzling and browned on top. If desired, top with whipped cream and berries. Slice and enjoy while hot.
